I'll have to check for you as we have an american working with us now. Just the other day she was saying sweet potato pie is actually mashed sweet potato, covered in syrup and topped with marshmallows then bunged in the oven.
It's eaten with the main meal - turkey etc for thanksgiving.
I thoight it was an actual pie lol.

I like my sweet potato's roasted in the oven. Brushed with olive oil, leave for about half an hour. Yummy. We're having that tonight with cous cous, broccoli and salmon marinaded in fresh chilli lime and ginger.After 4 years of heartache, 3 rounds of IVF and 1 loss :A - we are finally expecting our miracle Ki11en - May 2014 :j

Any ideas on what I can do with a bag of sweet potatoes which is freezable so I can use them before they go mouldy?
Was thinking some kind of soup, maybe something with a little kick (like curried butternut squash soup) but it would be carb heavy and could do with making it more evenly balanced with protein.Weight loss to date - 8st 13lbs :j0 -

Sweet potato mash would freeze well and could be used as a side dish or to thicken soups and stews.
Sweet potato curry is also good - just fry up onions, garlic and your favourite curry spices, then add the sweet potato and some stock and leave to simmer. You could serve this with some grilled chicken in tikka seasoning and a crunchy green salad dressed with lemon juice and some plain yoghurt for a balanced meal.0 -

Decided to knock up a soup in the slow cooker. Thrown in 3 large sweet potatoes, peeled and cubed, 1 red onion, chopped, 500mls veg stock, 1 can light coconut milk, good shake coriander spice, good shake ground ginger, tspoon lemongrass, tspoon thai green paste, tspoon dried red chillis. Will cook on high for 5-6 hours and see how it goes!Weight loss to date - 8st 13lbs :j0

In my sons class today they made sweet potato cakes - looked like muffins/cupcakes in size. Appearance similar to carrot cake.
My son amazed me when we got home and said how yummy they are (very limited eater). Have looked on net and am quite confused and all recipes. Anyone have any ideas - thought we could make them together in half term.

will ask teacher, but will be after half term. hoping to make them next week while son is still keenwill have a trawl through all the internet recipes as perhaps not a common thing!
