    Thought i would come out of the shadows and add a post to you all. Have been reading each day and hope you dont mind me joining 'the family'
    I live in Manchester area but spend quite alot of time up in the Lake District where my daughter is at moment.
    The Lakes are so beautiful in the snow ( not alot where we are ) but so cold today. Sun is out and sky is blue.
    Have been clearing out DH's aunts house over past few days as she has gone into a nursing home - just wish the weather had held off for a while until we could get it finished. Not a nice job but noone else to do it - skip arrives mid week!
    Making a chicken roast for dinner tonight - DD likes it when we stay as I do the cooking ! Might even make an apple crumble - a proper winter Sunday dinner !.

  • Can anyone help?

    I have either some chicken portions in the freezer or chicken breasts and want to make a casserole or stew tomorrow using the slow cooker. When Ive done this in the SC before, it never seems to thicken properly....any easy recipes I can follow that takes minimal prep? I have to use up 3 small carrots, 2 small parsnips, onions, spuds, frozen veg, dried broth mix, lentils etc. Also have numerous tins of black eyes peas, butter beans etc. Was thinking of putting a few dumplings on top too.

    If there was a lot left, would it freeze okay?

    Morning all. No snow here, but hope it's not too bad elsewhere and the flights go!
    Got my pay slip at work yesterday :j got much more than i expected, had a good day and hooked all the early morning shifts up to christmas! Nice and quiet then.
    My room is 6C today, i'm getting icy fingers just typing. I was going to do christmas shopping today but got up late and shall stay snuggled up indoors working instead. Lots of coffee!

    Our microwave went caput yesterday. Well, BF tried to defrost a frozen yorkshire and it went nuts, started making crazy zapping sounds and whole of the inside lit up bright white and flashing! Turned it off and haven't touched it since, but now I can't have porridge or reheat my hm frozen :eek:
    It didn't have the mica cover on it, maybe that's why? Will have to talk to landlord, if worse comes to worst lidl have a nice combi micro in stock at my local for £45.

    If you are using any frozen ingredients you should definitely NOT re-freeze unless you want an express ticket to food poisoning ;)

    PenPin, I would dust the chicken with cronflour and fry it off to brown it before starting the SC process, that should help to thicken it as it cooks, sorry no recipes as such, and just use less water than you would usually, you can always add some at the end if its too thick. Butterflybrain to bargainbird the other day that her dumplings should only take about 20 mins at the end of the cooking time in the SC, and yes, it will freeze fine :) Glad to see you about, hope you pick up soon.xx

  • VfM4 its perfectly safe to refreeze previously frozen raw ingredients once they have been cooked.

  • adelight we were talking about you at the meet yesterday and are all worried about you in a room as cold as that, your really need to get your heating on or you will end up killing yourself. Fair enough if your body is warm on the outside with layers etc, but it won't do you any good breathing in such cold air over a long period of time, it is dangerous.

  • Good morning each & every

    Don't know what the temperature is here but its baltic. Been out with the hound for a good long walk & yesterday's slush has frozen solid, with more snow on top overnight. A further sprinkle fell while we were out. Saw loads of geese flying overhead. Just had toast & coffee brought to me (I AM honoured!).

    No plans to go very far today, but am dreading the journey to work tomorrow. Don't know whether to be brave & go by bus (this means a long walk to work from the bus station & the same walk back again after work) or to take OH's car. Trouble is his car is an automatic & I hate driving an automatic on ice & snow. Can't take my put-put cos its in a coma at the menders.

    Doing roast pork & usual trimmings for dinner, apparently with help from OH! Will be preparing lots of veg to go with it cos I hardly ever touch meat.

    We received our 1st Christmas card yesterday so might make a start on writing ours & might even wrap a present or 2. I've got all my postage stamps for the cards, except for the ones going abroad, so could get them in the post next week if I put my mind to it.

    Off for 2nd coffee (I shall be like a thing posessed with the caffeine)
    & to try to make myself useful.

    I'm still envious about the Edinburgh meet. I know the Filling Station quite well & kept wondering about you all afternoon. You were very good not to wander into Deacon Brodies!

    Haven't heard from Diva for ages:( I hope she is ok (((((Hugs)))))

    Bitter here and we had a heavy frost, but thankfully no snow like our Northern friends have had :(
    Poor Mr and Mrs Marie I hope that they get home safely ((((Hugs))))

    I saw on the news this morning about the thunder and lightning with the snow - How weird is that ?

    DD is in my bad books she woke me at 5am because she had trouble with the key :mad: So DH let me lie in until 10am.
    DH and DS are going in the loft as well today to get all the Christmas bits down think we all have the same idea.

    Dinner is Roast Chicken with a nice Cherry pie and custard for dessert ( found a box of cherries that I froze in the summer in the freezer :j) I am trying to run the freezers down a bit before Christmas too.

    Well I am off to get another load of washing in
