Sary thank you so much for all the info:D

My answer re work is I know I have been treated so terribly badly and have never encountered anything like it ever, so now am stale mate with them, they are desperate to get rid of me but they can't because I have done nothing wrong worth sacking over and I want to save my little of self confidence they have left me with and tell them to poke it but CAB and all the other advisors say to hang in there for unfair dismissal and flag them all up to head office how bad they have been towards me, if I left they would send me flowers with pleasure but be let off and I can't have that:D

:rotfl:Anyone got afool proof recipe for a casserole? It is so bitterly cold out there I really fancy some good honest comfort food but when I cook a casserole the veg tastes watery and tasteless the meat is invariably hard and rubbish and the whole thing goes in the bin, the sentiment is there but it never properly translates to a yummy meal, OH recoils if I say to him I am cooking a casserole :rotfl::rotfl:

sear the meat before it goes in (brown it) and cook it on a low heat slowly

I still think your own well being is more important than wether you can take your employers for unfair dism, issal which you may have little chance of winning.

Victory - I have made 2 casseroles this week. If you have a slow cooker, brown your meat in a frying pan first. Chop up as much veg as possible, for maximum flavour (chunky carrots, leeks, onions, parsnips, swede, butternut squash, etc), use a stock cube for every pint of liquid, or use bovril etc. Season well with salt & pepper, a good glug of Worcestershire sauce. Cook in a slow cooker for about 6 hours, or all day if you put it on before going to work, it'll be ready whenever you want to eat it later, but the longer the more tender the meat will be, and if on the bone, it'll just fall away (like if you do lamb shanks). If you add potatoes into the veggies, the stock should thicken, or just adding some lentils or pearl barely will help, otherwise, you can drain off the stock, and reduce in a pan on the stove, or just throw in some gravy granules, bisto or cornflour to thicken it up. Another trick to have a natural thickener is to put a spoonful of plain flour over the meat once it's browned.

I made a beef casserole this week and it was delicious. There was some left over, and I had it for my lunch the next day, and it was like a hearty, chunky soup (as there was little meat left in it, but plenty of veg). I invested in a slow cooker this week and did a chicken casserole in a similar way, just using up whatever veg I have in the house. The only downside with a chicken casserole is that the meat can 'shed' a bit after a long period of cooking, especially if it's breasts, but chicken thighs are perfect for it. The trick to a really tasty casserole is the amount of good flavoursome ingredients you put in it, so shove in whatever you fancy, whether it's chilli flakes, garlic, stock cubes, etc.

    Hope that helps a bit.
