  • Quite happy to find out that one of my favourite Delia Smith recipes is great on SW - Spaghetti alla Carbonara. For anyone interested:

    Ingredients:

    Spaghetti
    Bacon (170g as for two people & taken as H/option b)
    Mushrooms
    2 large eggs and 1 extra yolk
    *20g parmesan (h/option b) *edited this to 20g (from 28g) at most for whole dish as I measured 28g in total and after a generous portion there was some left over)

    Cook spaghetti
    whilst spag is cooking cut bacon into small pieces and fry with mushrooms using fry-light
    Whilst spag & bacon is cooking, beat up the eggs and add 1/2 the cheeses & a touch of pepper.
    When spag is cooked quickly drain and return to the warm saucepan, now add the bacon, mushrooms & egg and quickly mix into spaghetti.
    The heat of the spaghetti, bacon & saucepan will cook the egg onto the pasta.
    Serve, sprinkle with remaining parmesan and enjoy !

    Now my working out are that this is free on a green day using the bacon & parmesan as healthy options. As I'm new to this and you can see that I have made an obvious 'schoolboy' error please let me know! If not I'm chuffed that my fav pasta dish turns out to be SW friendly :D

    Happy birthday Delly.

    Got back home at 4pm ish today. How odd it is to be back home after 2 weeks. I think I've done okayish on WW, lived on bread and cheese though as we had limited choice for vegetarian's, but overall I'm ok with what I have eaten. Not been able to relax too much with the kids though, I need a week off now to recover from the fortnight away- wishful thinking.

    Conservatory has come along nicely, just a few bits we need to finish off, but it's looking fantastic. very pleased, just got to settle up now.

    Yes this would be free on Green and it looks lovely, I shall definitely be trying it soon. Thanks for sharing :)
    The Parmesan can be taken as a HEA and 28gms would only be ½ HEA each (if serving 2)

  • Thanks for the b'day wishes everyone. As you can guess, healthy eating plan went completely out the window today but I don't mind . Didn't do anything much. Was off work for the past few days looking after DS. Finally got an antibiotic for him (after 4 weeks and 3 visits to the dr.) I was getting quite cross because he is a good baby all of the time and even when he's really sick he just whinges a bit but because he wasn't screaming his head off, the doctor thought I was a paranoid over protective first time mum. (grr!) It took a lady doctor to finally listen to me... anyway, the only way is up (or down) from here.

    I've got the minestrone soup all made and ready for my lunch tomorrow. I'll probably have porridge for brekkie because it fills me up so well... I'll let you all know how I get on. Good luck this week everyone

    I am really pleased with myself this week - weighed in at 1lb less than last week! It is probably a fluke, I'll prob be up again next week anyway (ladies time) but I have been relatively careful and have developed a fondness for chutney to replace the mayo I have with most things. Tonight I was doing chips for tea and at the last minute decided to do SW free chips which are nicer than fried anyway. I am still eating way too much but I'm not constantly stuffing myself like usual.
    I'm really trying to motivate myself to do SW full-time but just can't seem to do it.

    Well done on losing!

    My hairdresser does indeed provide luxuries....massage chair in which to sit when you have your hair washed, cup of tea/coffee + choc, glass of wine + nibbles whilst having colour put in..
