Spanish rice with chicken and chorizo
serves 2 -although we found it to serve 3-4
preheat oven to 180c/fan160/gas 4
If serving 2 it comes to 2.5syns per serving on EE- 2 large chicken breasts -cut into chunks
- 1 large red pepper -sliced
- 56g chorizo (5syns)-cut into small chunks
- 1 large onion -chopped
- 2 cloves garlic-grated/crushed
- 1.5tsp smoked paprika
- 1/2tsp dried chilli flakes
- approx 600ml chicken stock
- 190g paella rice
- frozen peas
- lemon juice to serve
- drop the chorizo into a warm nonstick frying pan and heat to release the oils
- throw in the chicken chunks and cook until coloured
- add the onions and peppers and cook until softened
- add the paprika and chilli and cook for 1 minute
- add the stock, bring to a simmer
- throw in the rice and then transfer to an ovenproof dish/pan and bake for about 20mins -until the liquid is absorbed (add the peas after about 10mins)
- cover with foil and leave to sit for 5mins
- squeeze over the lemon juice and serve

balsamic braised beef
serves 4
1syn per serving on RED/EE days -if using cornflour- 1kg stewing/braising beef -cut into large chunks
- 125ml balsamic vinegar
- 150ml beef stock -I didn't need this but I did use 1 beef stock cube
- 2 cloves garlic - crushed/grated
- 1 onion -roughly chopped
- 2 carrots -chopped
- 3 sprigs thyme -I used 1tsp dried
- mushrooms -cut in halves
- 1 bay leaf
- 1tbs of cornflour -mixed with a little cold water (optional) (3.5 syns)
- place the beef and balsamic vinegar in a bowl and leave in the fridge for 1hr
- Remove the beef chunks and drop into the slow cooker and switch on (I use high -if you have the option) -DON'T ADD ANY LIQUID
- after about 1hr I gave it a stir and threw in the carrots and onions -and the vinegar saved from earlier
- after 1 hr add the bay leaf/rosemary/garlic/oxo
- then I left for about another 2hrs
- throw in the mushrooms and then just leave until everything is tender...
- about 30mins from serving you can stir in the cornflour mix -OR use gravy granules to the same syn count

Really this is nothing to worry about at all, I started at 13st 3lb and am now down to 12st 4.5lb in a matter of weeks. You are absolutely grand and you will do really really great when back on track!

A very quick one from me. I'm off to the cinema shortly, I've got my Butterkist Light popcorn packed already
Green day:
B - oats (HEB), ff yog
L - salady bits with pasta and ff dressing
D - jacket spud, cheese (2 x HEA)
Snacks - HM lentil pie, small banana x2, popcorn (5.5syns)
Drinks - water, coffee, NAS squash
Total syns = 5.5
I still have a HEB left which I'll save for when I get home after cinema and wither have toast or fibre + bar.

Hello lovely slimmers
I am back, went completely off plan, then went on holiday to my mums in Holland who spoilt me with lots of yummy things, then did some hard thinking and I rejoined the class last night. The consultant said: "Welcome home", which was nice.
Result I put 5 lbs on since I left but I am happy with that.
So today fresh start
B: yogurt with banana
mid morning snack: 2 poached eggs (to try out my new microwave egg poacher)
lunch: stir fry turkey with onion, green beans, courgettes and rice mixed in
tea: pasta with tomato sauce, 28 gram pancetta (3 1/2 syns) some very lean bacon chopped up, broccoli and peas
HEa and b: probably laughing cow light triangles and ryvitas or weetabix with milk and fruit, not sure yet.
Bought the new magazine at class last night. And it has a syn free tomato ketchup recipe in it, brilliant for my SW wedges.0 -
Oh no....................my DD just opened the pringles (meant for our weekend away) I love these Ive already had a few someone please stop me, its so not fair I want them0
