    I think I got this version from here or minimins, I will try to find it again. The lemon curd is one variation, there is a mincemeat version and lots of ideas for other flavours.
    COUS COUS CAKE


    4.5 Sins for the lot on Green
    Ingredients/Method;
    4oz cous cous to that add quarter pint of boiling water and let it stand for
    about 5 mins to absorb water.
    Dont leave too long at this stage as I think this is what makes it go rubbery.
    Add 2 eggs and 2 tbsp lemon curd and rind and juice of a lemon.
    beat all that together, cook for 20mins don't leave too long in the oven either
    or you can cook in the microwave for about 5 mins.
    When cool mix 4 oz quark with 1 tablespoon of lemon curd and a sweetener if
    you need it and spread on top.
    Variation;


    I have also wondered about making it with
    almond flavouring in the cake and topping with low sugar jam and quark. (like
    bakewell tart) or adding dried mixed spice and a little dried fruit, like a hot x
    bun, or coffee and a toffee or vanilla mullerlight. or banana mashed in
    instead of one of the eggs and maybe some chopped dried apricots or fresh??

    I don't like Muller Lights either, (a) because they have gelatine in them:eek: and (b) because i don't think they taste very nice;) I'm currently eating Activia Fat Free yoghurts and they are yummy and gelatine free:D They are all free except the peach which are 1/2 a syn each so not too bad. I love the peach, cherry and vanilla ones. Not dead keen on strawberry but will eat if i have to.

    I posted yesterday about Mullers. I can only eat one now and again and then only if I whisk it up with some Quark. They taste so artificial and I don't like reading the list of ingredients!:(

    Sometimes I see women loading crates of them into their supermarket trolleys and I think "bet she's a SWer".

    I agree with you gunsand banjos, I tried an Activia one last week and it was better. (I had a money off coupon to use up!;))

    have you tried the ff onken strawberry or vanilla? they're syn free they're much nicer than muller....I cant do with them either :o

    Also the TOTAL 0% fat greek yog is syn free......its lush with a white choc options mixed in (2 syns) tastes like cream on your fruit!!

    argh, what came out of the oven was a sloppy mess. think i used too much liquid when soaknig the couscous initially.

    luckily i did 2 attempts - the second is not so bad, but i have popped it back in the oven to dry out a bit more!!

    The one I made was ok. It isn't quite cake like but it hits the spot for something sweet. Last time I made I made the quark topping too, which was really lovely, but haven't got any quark in today.
