Ok update on the sweet and sour chicken. Its really really nice but the sauce wasnt quite the same as my local. The one from the local is tangier somehow BUT I think the book is pretty close and I could prob just make a couple of adjustments to make it taste the same. Rice was spot on!! I didnt take any pics for 2 reasons (1) my camera has no batteries in it and (2) even if it did I had an accident with the batter and it looked like a complete mess
tasted fine just wasnt the prettiest
.
Amount of rice was plenty for one person but I felt there was too much chicken for just me. Would prob reduce the amount of chicken but use the same amount of rice next time

I'm not totally sure to be honest. I just didnt find it as tangy as the one I get from my local takeaway and it was a much deeper colour than I am used to. Not sure if it needs more tomato sauce or maybe more vinegar. There is also the posibility that I let it cook too long (a friend called for a complete rant) or may have been my method. I decided to put all ingredients in a pan (except the cornflour mix) and leave while I went to collect DS from nursery (not over heat) then continue as normal when I returned OR it may have been that I used muscovado sugar............. (thinking about the colour now)
Please dont get me wrong it still tasted lovely and if I couldnt adapt it then I would happily eat it like this.

I use my Prestige muffin tin but I always use paper muffin cases.
All that I could smell was an very strong smell of baked bananas, it was lovely.0 -

I was thinking about trying some cherries which I have left in the fridge (jar) but I think it would be too dry.
Normally I add milk or yoghurt in the muffin recipes that I have been using.
I think the moisture in this recipe comes from the mashed bananas.
If you can use milk in your recipes then take a look at the Muffins, muffins, muffins thread (still in the old style forum) for other recipes.
I used the banana recipe that I posted there but used fresh strawberries instead of bananas and a tub of value strawberry yoghurt, they were the best I have ever made.0 -
