Made the banana muffins yesterday and they are the lightest muffin I have ever had! Am going to try the cookies next.0

I got the book sent to my home a few weeks ago, so haven't seen it yet - sat here in middle of Marseille, drooling at the the pictures that you have been posting. Going home next week and can't wait to try out some of thee recipes.0

this book is fab and what i like best is that the recipes are so easy to follow. not like some of the cook books you get.'Children are not things to be moulded, but are people to be unfolded'0

My son says they have a machine that cooks the eggs, so not fried in any way, they add water and cover so they certainly sound like a poached version.
Mcds eggs are fried and steamed. the machine has a griddle base with egg rings on, that is oiled, and you crack the eggs into the rings
then you close the lid, and add water in the top of the machine
no idea on how to recreate this affect at home. i just cook in an egg ring, and baste til its set enough to turn out and flip

tried the sausage and egg mcmuffin this morning. it was nice but the sausage had way too much sage. I only used about half of what the recipe called for and it was still too much.
will do this again but I'll cut the sage a bit more0 -
I got most of mine from the Chinese supermarket, they're so much cheaper than Tesco etc. 100g bags of spices for 50-60p, I got a 300g bag of the elusive coconut powder for about £1!
chinese markets or ethnic grocers (usually african or middle eastern) always have superb prices on good sized bags of spices. if you're put off by how big some of them are buy them anyway and share them with others! it will STILL be cheaper than buying them from the grocery store and your friends and neighbours will appreciate it0 -

That's probably why the book tells you to put a square of foil on top of the egg ring. Not the same at all, but goes some way towards it.
I made them this morning and lost half the eggs as I lifted up the egg ring too soon...0 -
Well, after finding out how easy it is to make muffins over the last couple of weeks (see the Muffins, muffins, muffins thread), I thought I would give the banana ones a go from the book.
Even though the book doesn't do a lot of things that I have been doing I carried on and followed the recipe to the letter.
There was no milk in this recipe which seemed strange, it did not say to sift the flour so I didn't, it didn't say to beat the egg before you add it do the wet ingredients so I didn't.
All in all a doddle.
Results?
The springiest (if you know what I mean) best tasting banana muffins out of the lot that I have tried.
Swan, have you tried these yet? Give them a go and compare them to the ones that you have made using the regular method.
I read that one of the things that you should NOT do when making muffins is forget to sift the flour. These were well risen and I even got 11 muffins out of the mixture compared to 9 when I have made them in the past.
The mixture is quite runny compared to the othe recipes I have used but the are delicious.
I must get them in the freezer soon so I am not tempted to go mad and eat a few more!0 -

PS
The book says to cook them at 190deg but I baked them at 170deg as we have a new fan oven.0
