More exciting mince recipes

I have some minced buffalo (which incase you haven't tried it, is very similar to beef only waaay better!) which I want to cook tonight but fancy something different to the usual cottage pie I always end up making with mince. Would love some suggestions, I am slightly limited on other ingredients so here is what else I have:
potatoes
onions
garlic
carrots
sprouts
a few small tomatoes
bread
pasta and spaghetti
noodles
tinned tomatoes
tinned kidney beans
Various dried herbs and spices and all the usual storecuboard basics
Any ideas gratefully appreciated!0 -
Also, I should mention I had burgers last night so don't want them 2 nights in a row! Also, I have rice in the cuboard, as well as cous cous.0

buffalo bolognaise? fry mince, add some tomatoes, bit of carrot and eat with spaghetti.0

I'd say you can do anything with any type of mince that you can do with any other.
In my receipe book, the title of which is Mince, it calls for Turkey curry mince, just an example of somethine you wouldn't think off.0 -
I see you have kidney beans. I'd be making a chilli and serving it with rice or baked potatoes.0

You could use any recipe with red peppers, just leave them out or substitute with another veg
