I love albondingas - mexican meatballs ( this is a b*****ised versionbut storecupbqard through & through!)
chop up onion with a pinch of chilli powder and mince and mulch together into small balls
then fry off in a griddle pan
In a seperate pan saute some sliced onions and red/ yellow peppers and a bit more chili (if your kids can take it) then when they are softened a bit, add a whizzed up tin of tomatoes or a jar of passata. this is your chunky sauce.
I usually serve this with rice & blackbeans or plain white rice, tortillas ( or piadines!) and a large dollop of sour cream ( pr creme fraiche if im claiming to be dieting!):beer: Well aint funny how its the little things in life that mean the most? I was wondering if anyone could give me any recipe ideas for mince?? Not the usual spag bol/lasagna/chilli/beefburgers tho please!
I always seem to pick up a packet near sell-by-date in local shop and have accumulated 1 pack each of lamb, beef, pork and turkey thigh mince
But now I dunno what to do with them all!
Really I need to make things that I can split into smaller portions and freeze for meals as myself and OH work full time and so prefer not to spend to long cooking in the week.
Haven't got much else in cupboards/freezer and need to do a shop soon so don't mind buying a few ingredients to turn these into some yummy meals.

Stuffed cabbage leaves:
approx 16 cabbage leaves (depending on size)
around half a cup of rice that has been very lightly cooked
2tbsps oil (olive/sunflower)
1 large chopped onion
1lb mince (beef,pork and lamb all work well)
pinch of herbs
1 pint stock (I sometimes substitute with tinned tomatoes)
2 bay leaves
2 tsps chopped parsley for garnish
Place cabbage leaves into boiling water and simmer (covered) for 2-3 mins, drain and leave to cool
Stir fry the onion in the oil until transparent.
Mix the mince, onion, rice and herbs(not bay) together.
Lay out cabbage leaves (if they are small overlap 2) put spoonful of filling into each leaf, then fold sides of leaf into middle and roll into small parcels.
Place the parcels side by side into an ovenproof dish so that they are tight together, if the dish is too large, you can use things like carrots to fill in the gaps.
Bring stock to boil and pour over the parcels, add bay leaves, cover and cook for approx 1 hour 350F/180C/mark 4.
I serve them on a bed of rice or cous cous and cover with something like a mushroom or tomato sauce.
You can cook this up a day or two before you want to eat it and the flavour actually improves.

I add a tin of Heinz Mulligatawnay Soup to mince & onion to get a bit of a different taste ( I use Quorn mince but it works with beef mince too ) also you can add a tin of Campbells Condensed Tomato Soup + refill the tin with milk and some italian herbs to mince and onion - serve with pasta. Stuffed peppers /marrow.
Remove innards of the peppers and blanch. Cook off the mince and stuff into the pepper cases. Put in casserole dish, add some stock, cover and cook off in the oven for about 20mins or until the peppers are softish. As nearly everything is pre-cooked it is quite a quick dish.
Not done marrows myself, but I suspect the method is similar.

I too use Cosco mince, its by far the best mince, no fatty deposits when you brown it. Mince is a staple part of our diet in this house as its so versitile My cousin in Newcastle calls it "Leg of Mince" just to be poshI USED TO BE INDECISIVE BUT NOW I'M NOT SO SURE!

I have two 500g of mince sitting in the fridge that I want to use up tomorrow but I don't want to do my usual variations such as spag. bol., chilli, savoury mince; shepherd/cottage pie, lasagne, mousakka. Does anyone do anything a bit out of the ordinary with their mince? If so I would be really grateful if you'd share your recipe.
I'm getting a bit fed-up with my usual recipes so last week I cobbled together a layer of pre-cooked potatoes, added some cooked chicken, topped it with a red onion gratin with wine and cheese and it turned out really delicious. So I might try that but use mince instead of the chicken, if no-one has a better idea.0
