    Mexican Casserole:D Fry the mince with a chopped onion or 2, a drained tin of chopped tomatoes & some chilli powder (add kidney beans if you want to pad it out). Then basically make a lasagne BUT use tortilla crisps instead of pasta sheets & a tin of sweetcorn which you have blended to puree instead of white sauce. Finish with a layer of totilla crisps & top with lots of grated cheese. Bake for about 30 mins at 175 degrees. Serve with salad & garlic bread. Yum;)

    Without posting recipes, since some of these are pretty obvious, here's my mincy meal list;
    Nachos, tacos, lasagne, enchiladas, enchilada pie, quesadillas, stuffed cabbage leaves, spag bol, meaty pasta, meat and veg pasties, meatballs, burgers, rissoles, chilli, meatloaf... in fact, mince is pretty much the staple here!

    I make Morrocan Tagine adding onion, garlic, cumin, ground corriander and cinnemon to the mince. Shape into meatbalss and fry untill cooked. Make the sauce - fry onion, garlic and add a couple of good tins of tomatoes and add some chopped corriander to this. add the meatballs to the sauce and cook on low heat for about 30 mins to allow the flavours to develop. Serve with rice, or couscous or sliced sweet potaotes.
  • Lots of great ideas here that I hadn't thought of, so thanks. Unfortunately my internet connection was down (on and off - but nearly always off - for 3 days thanks to Virgin Media) so I didn't get the chance to read most of them but I'll certainly be trying them in future. I decided to stuff some cabbage leaves with browned mince and onions/celery and added some leftover rice. I shoved them in the slow cooker, topped with HM tomato sauce. Served it with Potato gratin and peas. DH and I really enjoyed it but DS said "next time just make spag bol". Guess that's another recipe that will be going on the backburner until DS goes off on his own two feet!
  • Some fab ideas here - anyone got a recipe for some tasty HM burgers? I really fancy trying them out - guessing they should be made fairly thin, and cooked under a grill?

    Al - bodingas!! spicy meatballs.

    Not 100% authentic but i take
    mince
    onions v finely chopped
    cumin ( half teaspoon
    chilli powder ( half teaspoon)
    sometimes some green jalapeno chillis finely chopped.

    Mulch all ingredients together. roll into little balls and cook them in a griddle pan ( or grill)

    at the same time I usually shred into strips - onion, pepper, courgette, into ribbony thin strips. Stir fry in a wok or fry pan, then Add to this jar of passata or whizzed up chopped toms and maybe a bit more chilli powder and a touch of cinnamon. this is the sauce.

    then I do some plain brown or white rice with that.

    I make HM burgers all the time. One packet of mince makes about 10 - 12 burgers. What you need to do is chop an onion and fry off till soft and leave to cool. Make breadcrumbs from two slices of bread. Add a teaspon of ground cumin, and some piri piri spice mix. Salt and pepper and some chopped fresh corriander. Put all this including the onion into a bowl and mix well, then shape into burgers and leave in the fridge for at least 30 minutes before cooking, either on the BBq or grill.

    I make a variation called Tex Mex Chilli
    Once the mince is browned I add a tin off tomatoes, a tin of kidney beans in chilli sauce, & a tin of sweetcorn, a also add cooked rice instead of serving it on the side.
    I serve this with wraps, grated cheese, mayo, soured cream, shredded lettuce & cherry toms, everyone makes their own wraps, my family love it.
