    How about burgers? We have HM burgers about once a week, with a salad in summer and some form of potato wedges in the winter. They're quick and easy and if the mince hasn't been frozen before you can freeze them raw once made up .

    both of these looked lovely on rick stein's programme last week - Lahmacun, a sort of minced lamb (although you could use beef i suppose) on flatbread, and Kefta mkaouara, a spicy egg, meatball and tomato tagine.

    you could explore greek, moroccan and turkish recipes for alternatives to do with beef mince!

    I like stuffed marrow where you mix the mince with rice and some spices and veg. Hollow out a marrow by cutting off the ends. Fill it with the mix , wrap in foil and oven bake. Lovely served with a tomato sauce. Not sure of exact recipe though, sorry.

    Second the burger idea - but put a slice of cheese in the middle, and it goes all gooey when you cook them (there's an ad on tv for burgers like this, might be M&S?). Along these lines...

  • Stuffed Peppers ? Fry onion, add mince, salt and paprika, cut stems and surrounding circle from peppers to make a detachable lid, remove excess seeds, fill peppers with mince, pop the lids on, oven bake in medium oven for about a hour, serve with rice.

    Oh and stuffed vine leaves. In Cyprus they stuff them with rice, but on mainland Greece they stuff them with minced lamb or beef. If no vine leaves available - try cabbage leaves (add carroway seeds) - very East European !

    We do something a little like the Lahamcun. Warm white pitta just enough to split them, spread a thin layer of spiced mince in side, sprinkle with water to slow the grilling process and then grill until browned & cooked inside. Meat needs to be spread very thin though or I can see there would be problems. Lovely with dips & salad.

    Hi, we use an indian sauce called Karahi - it is spicy but you can add as much or as little to your taste.

    Basically - fry onions, meat, then add sauce and tinned tomatoes.

    You can either buy it as a paste or as a cook-in sauce in asian foodshops.

    I made a mince curry tonight - onions, odds and ends of veg, mince, curry powder - and bulked it out with red lentils, gave a lovely creamy texture.
    Debt@16.12.09 £10,362.38, now debt free as of 29.02.2012.

    My favourite is savoury layer pancakes, simply make up the mince in a bolegnese sauce or similar and spread between layers of pancakes with some grated cheese on top of each layer of mince mixture, around 10 to 15 pancakes should be enough to produce a large cake around 4-5" deep, then slice like a cake into wedges and serve with some crisp vegetables.
    Yum.

  • I sometimes make meatloaf, not very exciting but tasty just the same. I use a 1lb loaf tin, fairly equal amounts of sausagemeat to mince, so about 8oz of each then add a chopped medium onion,some thyme and sage, 3 slices of bread made into crumbs, salt and pepper & a beaten egg to bind it mix all together and press into a lined loaf tin, bake for about an hour and 15mins then take out of oven and place a large plate on top with a heavy weight on top of that,leave for at least an hour,overnight is better if you want to slice it cold to go with salads etc .Served hot you can have it with potatoes and veg and onion gravy.I often make one and freeze it in slices as hubby is not keen on it so I defrost to eat when he's having something I don't like lol
