Hi all,
I'm pretty new to the board, so hello everyone!
I had my LBM a few days ago and have been meal planning.
Today, i've got 6 low fat sausages to do something with (there's only me at home as OH is working in Sydney, so i can freeze the rest).
I thought about doing something along the lines of cooking the sausages, mixing them with fried onions and mushrooms, BBQ beans and a tin of tomatoes and whacking it in the oven. What do you think? Any other idea very welcome!
i've run out of potatoes but can get some more if necssary...

I had a really good sausage dish last night, I did post it on the Daily, ut not everyone reads the daily, so here it is:
Sausage HotPot:
Recipe:
1 large onion, sliced
1 punnet mushrooms, sliced
4 sausages
1/2 small cabbage, shredded + blanched
thyme
oregano
salt + pepper
chicken stock
1 tbsp flour
4 tbsp water
potatoes, sliced
Saute off the onion + mushrooms slowly in a little oil salt + pepper until lightly browned, add in sausage, broken into pieces. Brown meat off a little. Mix the flour wiht the water.
Mix together wiht the cabbage,spices, flour mix, more salt + pepper to taste, and spoon into a baking dish, pour in just enough stock to cover; top with the sliced potatoes and bake, covered for 35 minutes, then uncover + continue to bake for 15 or until the potatoes are cooked and soft. Serves 4.

Got this from an Oxo advert many many years ago.........lol
Packet of sausages
Large onion
Tinned tomatoes
2 oxo cubes
Fry onions and sausages till cooked
Add tinned tomatoes
Crumble in two oxo cubes and seasoning
Stir around the sausages
Turn heat down to simmer for about 20mins
Serve with mashed potatoesMary

Sorry if this has already been suggested - Delia's Poor Man's Cassoulet. I use how ever many sausages I have - once I used one cut up lol. It is nice though.0

I have over 50 sausages in my freezer that I have bought over the weeks on offer.Apart from the usual suasge and mash/chips,toad in the hole and sausage casserole what can I make?

i like sausages cold in pasta salad -
cooked pasta and whatever veggies you like - we do onions, red peppers, cucumber, herbs,the children like sweetcorn and peas. whatever dressing you like - a mix of mayo and cream and a bit of mustard ismy fave, add cold chopped sausages - great for picnics.0 -
Ooooh there was a fabulous sausage recipe in delicious magazine recently-oven baked sausages with balsamic tomatoes.
Just add sausages, wedges red onion sliced garlic (I also put some chunks of red or yellow pepper) to roasting dish, roast @180(160 fan) for 15-20mins add 500g halved cherry tomatoes 3 tbsp balsamic vinegar and roast for another 15mins. scatter with basil and serve. I have had it with bread, and also as a pasta sauce. (have also done it with chicken rather than sausages, it is a FAB recipe)

I'm sorry, call me old-fashioned but you can't beat sausages and onions with ketchup in a nice white barmcake.

Use the meat to make meatballs- add a few herbs and use a couple of tins of tomatoes with onions and peppers for the sauce. Yum2009: £328

My favourite meatball recipe is to add some lemon zest and black pepper to the meatballs, then serve with oodles of pasta with wilted spinach or salad leaves and peas, drizzled with a mixture of olive oil and lemon juice.
Also if you like cabbage, you could make stuffed cabbage - sounds weird but its scrummy.0
