How's about this. It's based on one of Aldo Zilli’s in-flight meals for Thomson Fly.
SAUSAGES IN ITALIAN TOMATO SAUCE WITH MASHED POTATO
Serves 2
INGREDIENTS
2 cloves of garlic
2 onions
375g of old potatoes*
250ml of water
¼ of a teaspoon of salt
½ a tablespoon of butter
½ a tablespoon of milk
Ground pepper to taste
2 tablespoons of olive oil
4 sausages**
400g tin of plum tomatoes***
2 teaspoons of basil
Ground pepper to taste
METHOD
Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces. Peel the potatoes and chop them into quarters.
Put the water and salt into a saucepan on a medium heat. Add the potatoes. Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on the saucepan and cook for 20 to 25 minutes until soft. Check the water level from time to time and top up if it starts to dry out.
Drain the potatoes and mash with the butter and milk until it is smooth and lump free. Season with the pepper.
Put the oil into a frying pan on a medium heat. Add the garlic, onion and sausages. Fry the garlic, onion and sausages for about 2 minutes. Stir frequently to stop it sticking.
Open the tin of tomatoes. Put the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan).
Put the chopped tomatoes into the pan. Add the basil. Continue to cook, stirring as the mixture boils. Season with the pepper. Continue to cook, stirring as the mixture boils, until the sauce has reduced and the sausages are thoroughly cooked.
Serve with the mashed potato.
* New potatoes make rubbish mashed potato. Use old ones like King Edward’s or Desiree Reds.
** Use good quality sausages. The more meat in them the better. There are few tastier foods in the world than a meaty, herby British sausage. There is nothing worse than a bland, mass-produced tube of pink stodge.
*** Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.The acquisition of wealth is no longer the driving force in my life.0 -
Have got a pack of pork sausages and fancy doing something different with them. As well as the normal traditional way of eating them, i sometimes chop them up and cook them with tomatos, veg and spices amd serve this with rice or pasta. Bit bored of this now.
Does anybody have any ideas or recipes for something different with them?

i have some sausages to use up.
i have things like peppers and onions in. should i try some kind of roasted veg with sausages?
does anyone have any tips on how to jazz this up a bit?0 -
Pull the sausage meat out of the casing, roll it into little balls and fry it up with the peppers then pour on pasta and some tin tomato's and you've got a lovely pasta meat balls!!0

Sausage Pasta is lovely
Just fry the sausages , cut them into bite size pieces, fry onions put all into a wok and add peppers, mushrooms (if you have any) and either a tin of tomatoes or I use Pasta sauce with garlic and serve on top of pasta. My lot love it.
Or how about a sausage stew/hot potBlessed are the cracked for they are the ones that let in the light
