Just grill them, let them cool down and put them in the fridge overnight. Slice lengthways then put on a salad sandwich to take to work for lunch.
More interesting than boiled ham ;)

I braise them with loads of onions in a rich gravy and then do a cheat's Sunday lunch, serving them with yorkshires and all the trimmings of a Sunday roast

Scotch eggs - I bake them in the oven rather than fry, great for salads or packed lunches.

Someone mentioned recently on a thread about marrows that it is nice to cut up marrows into thick slices, scoop out the middle (seeds), parboil, sit on a baking sheet and fill with sausage meat. Bake in oven. This sounds great to me, especially served with a tomato sauce. I am definitely going to use some of my sausages to try this out.

  • If any of them are in a string, I saw an episode of Jamie Oliver at Home where he untwisted the joins and squashed the sausagemeat into the gaps to make one great big sausage (tee hee) which he curled up and roasted in something or other. It would be a bit more interesting than just sausages, anyway!

    Hi SmileyS,

I've added your thread to the main sausage recipe thread as it has lots more recipes that should help you to use them up.

This one from another more recent thread is a sort of "Mediterranean Bangers 'n' Mash".

Of course sausages and mashed potato go together. So does beef and tomato. But only a genius like "Zilli" could have thought of not only combining the beef and the sausage, but also bringing it all together with a tomato and basil (another perfect combination) sauce.

BEEF SAUSAGES IN TOMATO SAUCE WITH MASHED POTATO

This dish is based on one of Aldo Zilli’s in-flight meals for Thomson Fly.

    Serves 2

    INGREDIENTS

    2 cloves of garlic
    2 onions
    375g of old potatoes*
    250ml of water
¼ of a teaspoon of salt
    ½ a tablespoon of butter
    ½ a tablespoon of milk
    Ground pepper to taste
    2 tablespoons of olive oil
    4 beef sausages**
    400g tin of plum tomatoes***
    2 teaspoons of basil
    Ground pepper to taste

    METHOD

Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces. Peel the potatoes and chop them into quarters.

Put the water and salt into a saucepan on a medium heat. Add the potatoes. Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on the saucepan and cook for 20 to 25 minutes until soft. Check the water level from time to time and top up if it starts to dry out.

Drain the potatoes and mash with the butter and milk until it is smooth and lump free. Season with the pepper.

Put the oil into a frying pan on a medium heat. Add the garlic, onion and sausages. Fry the garlic, onion and sausages for about 2 minutes. Stir frequently to stop it sticking.
Open the tin of tomatoes. Put the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan).

Put the chopped tomatoes into the pan. Add the basil. Continue to cook, stirring as the mixture boils. Season with the pepper. Continue to cook, stirring as the mixture boils, until the sauce has reduced and the sausages are thoroughly cooked.

    Serve with the mashed potato.

    * New potatoes make rubbish mashed potato. Use old ones like King Edward’s or Desiree Reds.

** Use good quality sausages. The more meat in them the better. There are few tastier foods in the world than a meaty, herby British sausage. There is nothing worse than a bland, mass-produced tube of pink stodge.

*** Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.

    Easy sausage supper.

Slice fresh tomatoes and cover the bottom of a casserole dish.
Place precooked sausages over the top.
Pour over a tin of baked beans.
Cover with mashed potato, shepherds pie style.
Pour over onion sauce(the packeted ones are fine but I know it's not very OS!) Or make your own if you have time)

This is very tasty and the kids love it. Makes a nice change from just sausage and mash.
