    The other night we had gorgeous stuffed peppers with broadbeans and peas:

    In a bit of oil fry a bit of onion, add the broad beans and peas, season to taste. Add a block of feta cheese (chopped) and mix well.

    Roast peppers in the oven, when they're almost done, stuff with cheese and beans mixture and leave in the oven until cheese melts.

    We served them with cous cous and they were delicious!

    They did something similar to this on Market Kitchen last week, but used lemon instead of oranges. it looked nice

    Cover beans with lightly salted water, simmer for about 40 mins, drain, cool, place in serving dish and sprinkle with a mixture of 2 chopped garlic, parsley to taste and 1 chopped chilli, as hot as you like. Drizzle with oil and vinegar and serve hot or cold...I like it best with some pecorino cheese

  • hmmmm i still have a ton of broad beans......apart from eating them as they are,blanching and freezing...and i've tried the burger recipie on here...what i want to know is....

    is there anything else i can do with them????? make from them????
  • Hiya :) Our local farm shop was selling tubs of broad bean hummous at the weekend - tried a taster of it and it was lovely, but then decided I could make it myself much cheaper. The girl on the deli counter said it had broad beans in (!), parsley, mint, lemon and some olive oil. I guess you could use it as a dip, or in sandwiches?

    I've never made homous with anything but chick peas but I imagine you'd put all the ingredients mentioned above ina blender. For every couple hundred grams of cooked broad beans I'd use the juice of a lemon and a tbsp of olive oil, plus a couple of crushed garlic cloves and some springs of parsley. If it's too dry add more lemon juice, if too liquidy add more beans. If you don't have a blender use a potato masher, it will be more chunky than the shop bought stuff with a masher but it will be fine.

    The other day we had broad beans cooked in butter with smoked garlic, they were FAB! :D
