Did some baked apple cheesecake with butterscotch sauce in class today. The cheesecakes had a pastry case instead of a biscuit base, which was nice.

Now I have a craving for something sweet but I have nothing made, and can't even decide what I want.

Technically yesterday! :D I made chicken pies. I had some frozen chicken picked off a boiled carcass when making stock months ago, made a white sauce, added some basics tinned sweetcorn lurking in the cupboard. Put this into individual casserole dishes and popped a circle of puff pastry (xmas leftover) on top and put it in the oven. It puffed up so much, lovely! They looked like the ones you get in pub grub! I have some spare pastry left but not sure quite what to do with it at the moment, also need to use up some raspberry compote (not HM )

I have some bananas that need using up so it looks like a banana cake on the menu tomorrow!

Today I have made some cocoa brownies (no chocolate required) which contain walnuts and raisins, and they are gorgeous even if I do say so myself (recipe number 3 for anyone who wants to have a go at them).
Enjoy the little things, for one day you may look back and realize they were the big things.

I've just made a batch of very tasty flapjacks.

Not baking but I also made some coleslaw and potato salad ala slimming world!
  • I have made 12 vanilla cupcakes with a vanilla buttercream frosting, and it was my first time piping the buttercream and it took a bit of time to get them right but i am very pleased with how they turned out, although not quite The Hummingbird Bakery standard yet:rotfl:
