I had five good sized tomato's that I brought back from my holiday on Friday, and they were passed their best for slicing for salad or sandwiches and beginning to go a bit soft.I am not keen on fried toms so I had a quick look on Delia's site and adapted her recipe for pasta sauce a bit
Into a saucepan I put a glug of olive oil ,some chopped up onions and a desertspoonful of lazy garlic from my precious jar.Sliced very finely a large blade of celery and bunged that in as well .cooked gently for about five minutes. Then put in my skinned toms and a good grate of rock salt and a few hefty twists of black pepper .Some dried mixed herbs and two healthy squirts of tomato puree. Put the lid on and left to simmer for about half and hour until it had reduced to a lovely thick consistancy, stirring it now and again so it mixed together and didn't stick to the pan.
Poured the resulting thick sauce into a spare chinese plastic tub, and when cold chucked into the freezer to use later this week when I make some pasta. At least as much as one of those jars of pasta sauce made with everything I already had in the fridge so its cost me nothing really apart from time to cook it . I am feeling very pleased with myself as nothing has been wasted and I have a 'free' pasta sauce mix:j:j
definitely a 'waste not, want not' recipe0 -
I made HFW breadcrumb B&B bread and butter pud with my mountain of crumbs, but that resulted in left over eggwhites, so I attempted a lemon meringue pie - kind of! I made pastry, stuck some lemon curd on, then the whisked egg whites... This OS lark is too addictive - I could not throw the egg whites away so made more work for myself! The meringues look ok, if a little brown!, but are still "drying out" in my turned off oven, as thats what im supposed to do according to Gosia!
I also pre made the pastry for tomorrows bake off as thats the bit I hate doing most - the fun is making up the fillings from leftovers, so its in the fridge ready to go!

The banana bread recipe I use is Delia's.
100 grammes of dried fruit and 75 ml of bourbon/amaretto/wine heated in a pan and set aside for an hour.
Melt 125 grammes of butter/marge in the microwave set on "defrost". Add 150 grammes of sugar, beat in 2 eggs. Add 300 grammes of mashed bananas (4 small ones), Add dried fruit mixture, then add 175 grammes of plain flour, 2 tsp baking powder, 1/2 tsp bicarb, 1/2 tsp salt, 60 grammes chopped walnuts, 1 tsp vanilla extract (optional).
Turn out into lined loaf-tin and bake at 170 degrees C/325 degrees F/gas mark 3 for 1 to 1 1/4 hours.0 -
I use a breadmaker for baking my bread. Most recipes that I have that call for yeast give measurements in teaspoons. However, I find that using weight is much more satisfactory so I have a question.
When using breadmaker yeast is there an agreed measurement as to how many grams are in a teaspoon?
Thank you for any advice you feel able to offer

I looked it up Kevin and got more confused than you are to start with! But I found this, doesnt help much I dont think though
lol:
"There is no real universal formula for converting grams to teaspoons that will work for all ingredients. This is because grams measure weight and teaspoons measure volume. A teaspoon of sugar weight 4.2 grams while a teaspoon of salt weighs six grams. A teaspoon of dried parsley only weighs 0.5 gram."
I think you might be better off with the teaspoon option

Have made some scotch pancakes, a mince and potato plate pie and baked some parmesan & sundried tomato bread.
Getting very inspired by all the lovely cakes and biscuits being baked, and will try a few of the recipes this week.
