I'll be able to join in now I've got my processor (I've not got the strenght in my arms to do it manually). Twinks are on my list, as are scones and some loaf type cakes.

but managed some fish pies to take to dad, and sweetcorn fritters that were fantastic with tea.

Part of the Furniture Combo Breaker
Today I managed to make my first cake that looked like a cake (they usually look like a lump of something or break up coming out of the tin!). It was a victoria sandwich with a quick home made strawberry jam, fresh straws and cream filling.

can anyone recommend a good recipe using bananas. I have two to use up that are a bit too ripe for me too eat as I like them just past green.

    Microwave Banana pudding:

Melt 100g butter in the micro for 30 secs or so, add 1 and a half mashed bananas (over ripe give the best flavour), mix in 100g brown sugar, 100g self raising flour, tsp cinnamon, 2 beaten eggs and 2 tbsp milk.

Slice the other half banana over the top then microwave on full power for 8-10 min until cooked through. Dust with icing sugar and serve warm with ice cream.

Yummy, cheap, easy and quick!! :D

The kids have been in the kitchen today. They've made rice krispy cakes, pizza scrolls, chocolate chunk cookies and banana pudding. :D

I didn't get a look in today, but hoping to elbow them aside to make some scones tomorrow!

I'm surprised you find time to do any baking considering you have seven children - I'm exhausted just thinking of it :)

Yesterday I found half a whoopsied brown bloomer in the freezer, so it got trasformed into bread & butter puddings 4 single portions for dad and a triple for home. It's the first I've made with brown bread but tasted yummie.

I think bread pudding will be made after twinks and scones.

Since Mom passed away Dad is enjoying having meals and treats in the freezer so he can get out just as much as he needs. Scones freeze brill, he just warms them under the grill and they are just like fresh

  • On Friday I made Delia's coconut cake, to use up the grated coconut OH and I had from a 'spur of the moment' purchase at the weekend. However, rather than doing the recipe in cake form, I did them as cupcakes instead (without icing). They've all gone, so I think people rather like them!
