can anyone recommend a good recipe using bananas. I have two to use up that are a bit too ripe for me too eat as I like them just past green.
If you're still looking . . . I'm not a big Nigella fan but I do love her muffins
I've never used the honey in it as I never seem to have any in when I'm doing them, still come out gorgeous though!
Nigella's Banana Muffins

Microwave Banana pudding:
Melt 100g butter in the micro for 30 secs or so, add 1 and a half mashed bananas (over ripe give the best flavour), mix in 100g brown sugar, 100g self raising flour, tsp cinnamon, 2 beaten eggs and 2 tbsp milk.
Slice the other half banana over the top then microwave on full power for 8-10 min until cooked through. Dust with icing sugar and serve warm with ice cream.
Yummy, cheap, easy and quick!!

Weetabix Brownies using shredded wheat instead. Also threw in a handful of mini marshmellows that were lurking around...they are wonderfully gooey and chocolately

Today I made some mini apple turnovers with the remaining puff pastry and a frozen apple. I just peeled, cored and chopped the apple and put in a pan with some sugar, cinnamon and a little water & cooked until soft. When it was cool I put it into pastry circles and folded in half, sprinkled with sugar and popped them in the oven.
I've also got a sponge cake on the go, but this time I put some raspberry compote in the middle. Not sure what it will turn out like, but I'm ever hopeful

Today I made Nigella's flourless chocolate brownies and some chocolate chip cookies all done whilst the oven was on roasting a chicken.
I love Nigella, not least because she has bigger hips than me which is no mean feat :rotfl:Started Self Managed DMP 10th May 2017.

Can anyone recommend a fairly simple yet yummy recipe for cake or biscuits that once baked will keep fresh for about a week (or more)? I know they will freeze well but I haven't got any room in the freezer!
Oh, and not fruit cakes or the like please, as both I and the person I was thinking of baking for don't really like them.0 -
