    I made carrot & coriander soup today and attempted to make a loaf of bread but it came out like a brick! The dough didn't rise, does anyone have a fail-safe recipe for bread - don't have a bread maker though? Thanks in advance!

    I feel your pain, hun - I'm on a similar diet and in the last two days I have baked 24 chocolate muffins, 12 vanilla & white chocolate muffins, choc chip cookies, flapjacks, cheesey biscuits, two loaves of wholemeal bread as well as making (from scratch) lasagne, chicken soup from the carcass, pasta bake and an Irish stew!

    To all of which my OH has merely said 'nice'.

    Ah well, at least the kids appreciate the effort I'm making for them, especially when I can't eat any of it :D

    Yesterday I made a raspberry cake, with wholemeal flour, frozen rasps and yoghurt. Its nearly all gone! Also made a HM chicken, lentil and veg curry (using LO HM soup-lentil, tom, carrot, sweet pot, as the base).
    Today am making tacos so the local steak mince is currently cooking away with some finely chopped onion, will add peppers, sweetcorn and chilli sauce later, and serve with ready made tacos (not worked out how to make them yet!).
    Ermutigung wirkt immer besser als Verurteilung.
    Encouragement always works better than judgement.

  • I have just made my very first banana bread adapted from Nigella's recipe online.

    I would have to adop ANY Nigella recipe because I've never made one yet that I (or my family) like. I've tried at least a dozen different recipes as they look so delicious when she makes them on tv - but they are always AWFUL!!! I guess we just don't share the same tastes.....

    Yesterday I made hot tomato and pepper soup, chilli con carne, spag bol, chicken supreme and chicken pie, all freezer bound. And today I have baked so far, apple and dried fruit muffins, banana muffins and double chocolate chunk muffins. I also plan to make some bakewell tarts, flapjacks and shortcake and if I get time, my daughters are wanting some more chocolate truffles!!
    Starting weight 17st 4lb - weight now 15st 2lbs

    30lb lost of 30lb by June 2012 :j:j:j (80lb overall goal)

    I'm just waiting for my creations to rise! I'm making a sunflower seed bread loaf, hope it works ok as I've only ever made rolls before. Also making the crumpets from hairy bikers mum's know best. Never made them before either! My final 1 isn't baking but I want to tell you anyway......I'm making HM forest fruits frozen yogurt with my HM yogurt from my easi-yo. Can't wait for it all to be ready!!

    Totally cream crackered now so chilling on MSE x
    Blessed are the cracked for they are the ones that let in the light

    I've made peanut butter biscuits... someone them are possibly on the... rare... side. My oven is very tempramental, the back gets hot but the front doesn't so with most things I have to turn them half way through cooking otherwise one side is burnt and the other ir raw!

    Perhaps travel cannot prevent bigotry. But by demonstrating that all people cry, laugh, eat, worry and die, it introduces the idea that if we try to understand each other, we may even become friends.

    Pakoras is a deep fried south asian dish made with potatoes,spring onions,spices and gram flour accompnied with a chopped cucumber,tomato,pepper and natural yogart dip. Hot and spicy with cool and refreshing YUMMY!(forget the diet!).

    I shall try to give you the accurate measurement of the ingredients,but i have been taught to use the palm of my hand as a measuring device so please bear with me!

    PAKORAS:

    2 medium sized potatoes
    1 regular bunch spring onions
    1 tomato
    quarter green pepper
    medium fillet of fish(salmon,cod or any preferred)/or chicken breast,or leave without for vege option.
    1 large cupful of gram flour
    1 tbsp of chilli powder
    1 tsp salt
    1 tsp pepper
    400ml water
    preferred oil for frying
    1 tsp grated ginger/optional to taste

    In a large bowl add roughly chopped(1 inch chunks)of all the potatoes,onions,tomato,pepper,fish/chicken.

    Add the rest of the ingredients in the bowl apart from the oil and stir untill well mixed and leave it for 15 mins.

    heat oil on medium flame and scoop 1 tbsp of the mixture into the oil to deep fry (pour the mixture directly onto itself so it sits in the oil,and dosnt spred out)leaving 2 inches apart repeat this using the rest of the mixture.

    fry for 7/10 mins and stir occasionally then drain them on kitchen paper.serve hot with a yogart dip as follows or tomato sauce.

    YOGART DIP:

    A cup of natural yogart
    a few mint leaves,very finely chopped
    quarter chopped cucumber
    1 medium tomato
    1 small onion
    chop and mix everything (bitesize)

    ENJOY!...... as you can read i am no Delia Smith,(SORRY......i did try my best!):rotfl:
