Tonight I baked a chocolate cake covered in malteasers, chocolate buttons and galaxy bites (I think that's what they are called) it's DS 18th tomorrow and he loves chocolate.

The recipe for my "Lemon Layered cake" as requested.
Cake:
1 lemon
6 oz S. R. Flour
1 teaspoon baking powder
3 eggs
6 oz marge
6 oz caster sugar
Filling: (Lemon Curd)
2 eggs
3 oz caster sugar
1 lemon
2 oz butter cubed
Icing:
1 lemon 4 oz Icing sugar
2 x 7 in lined tins though I only have 8 in and turned out fine.
Method:
1. Grate rind and squeeze 1 lemon.
2. Sift flour and baking powder into bowl. Add 3 eggs along with marge and sugar.
3. Beat everything together well and stir in rind and juice. Split equally between two tins.
4. Bake on Gas 4 for 25 mins/until cooked
5. While cake is cooking, make filling. Break eggs into a heatproof bowl and add caster sugar. Add grated rind and juice of 1 lemon. Add chopped butter. Place bowl over pan of simmering water. Simmer, stirring occasionally till thickened. (Takes about 20 mins.) Leave to cool.
6. When sponge and filling are cooled, spread lemon filling over one sponge and sit other sponge on top. It might ooze but thats ok.
7. Sift icing sugar and mix with half a lemon juice till like glue.
Ice the cake and decorate with lemon zest.

Gooseberry and Apple breakfast muffins - like normal muffins but a bit healthier , made with some ground flaxseed, oat bran and wholemeal flour, apples from garden and gooseberries from freezer from allotment in JuneGrocery Challenge Feb 14 £500 / Spent £572.10!

Made my first seeded loaf, had a slice with marmalade for breakfast. Very yummy, next one in the bm now for the freezer. A steak pie to replace the last quarter I took out of the freezer today - there's just me but I make a big one and cut it into 4 before freezing, that way there's less pastry than individual ones and easier than having to defrost a whole one.0

I can't believe how long it has been since someone posted here! 4 days!!
I've baked millionaire's shortbread. It isn't a very neat bake (it was my first go and I was feeling unwell by the end!)

I've been trying out a new baking book this weekend, bought as a leaving present from my last job. Crystallised ginger butter biscuits, apple muffins and shortbread now fill the kitchen, and OH also tried a chocolate cake that was almost successful. The bread we made was a bit of a cheat but be only made that because we found a pack in the cupboard. So a busy weekend in my mum's kitchen! Hope it'll be in my own before too long!!NSDs January - 3/8 2017 total - 3
