    KM your cake looks amazing! I may make a lemon cake myself in a week or two - yummy! Homemade lemon curd sounds lovely too.

    I used a blossom flower plunger cutter courtesy of Tesco Orchard (they sent me free vouchers to test out sections of a revamped store, so I used them all on baking related items :)). And the shimmer pearl things were reduced to 25p in Asda, so I stocked up a little bit :whistle:

    I got a HUGE set of plunger cutters on Amazon recently, for under £5. Had to wait for them to come from Hong Kong but they've been surprisingly good quality and come apart for washing as well. I'm just getting into using cutters and doing things like this so thanks for posting your cake as it gave me an idea for an upcoming birthday!

  • 2 dozen lemon curd cupcakes just went in the freezer for a party on Sunday. I saved the hollowed out middles and we're about to have them for dessert with ricotta and left over curd.

    Just waiting for the oven to cool down a bit now so I can pop a meringue in there for a work lunch on weds.

    This weekend I whipped up what seems to be a growing fav of date and walnut loaf (started mainly to use up dates in the cupboard which looked a little unappetising to eat as they were) - this time I used boiling Guinness (leftover from Guinness cupcakes) instead of boiling water to soak them in - turned out really rather well even if I do say so myself. Now i just need someone to give us some more dates we're not going to eat lol !

    Today I baked super quick/simple chocolate chip muffins. They could've used a minute or two longer, but I'm always critical as I'm new to baking still.

    a very large tray of hm pizza, I used up leftover ratatouille in the sauce, topped with olives , ham , mozarella and cheddar. I meant to do a bread as well but thanks to DD2 I had to help with uploading documents for Uni , which was an utter nightmare....no salad either ;( The pizza was nice though - and we got a 2nd hand oven off gumtree today, fingers crossed it will work!

    A rhubarb pie, plum pie, apple pie, and apple and blackberry crumble. That's all the fruit in the freezer used up at last!

    Tonight I am going to make blackberry flapjacks. Hopefully they'll be ready in good time for GBBO so I can eat one (or two) while watching it!
  • Raspberry upside down cake, It was a Rachel Allen recipe that I hadn't tried before. I've just tried a little slice, and it tastes very yummy!
