The recipe is from an old Be-Ro book and makes approx. 30-40 biscuits giving 15-20 creams when paired up.
Biscuits
100g/4oz butter or marg
100g/4oz castor sugar
1 egg
200g/8oz plain flour
15ml/1 tbsp. cocoa
Filling
15ml/1 tbsp. cocoa
50g/20z butter
100g/4oz icing sugar
Castor sugar to dust
1 - Cream together fat and sugar till light and fluffy
2 - Add egg and stir in flour and cocoa
3 - Knead well and roll out to 2.5mm or 1/8th inch
4 - Cut into fingers, !!!!! with fork and dust with castor sugar
5 - Place on lightly greased baking trays
6 - Bake for 10-12 mins at 160*C/325*F/Gas Mark 3
7 - Cream together butter, cocoa and icing sugar
8 - Sandwich biscuits together when cool
If you don't have cocoa then drinking chocolate works fine but will make slightly paler biscuits.0 -
