Today I have made a steak and kidney pie, cheese straws, chocolate muffins (these were disgusting and had to be binned :eek:) mars bar brownies and a lemon drizzle cake. I had to make something tried and tested after my daughters' disappointment with the muffins. I don't really know what went wrong although the mixture was very dry so I added some milk to it. Oh well, we live and learn

Maybe too late for the muffins this time if you already binned them- but could have been crumbed and used in making chocolate truffles or a traybake or even sliced and made into a trifle with jelly.

Today I made my mums easy no measure sponge, I'm sure someone here will have similar recipes.
You use the pot where the yogurt comes as a measure.
1 125g plain yogurt
1 pot of sunflower oil
1 1/2 pots sugar
3 pots plain flower
1 teaspoon baking powder
You can add vanilla, lemon zest, cinnamon, tinned fruit pieces, or any other flavouring to the mix!
Cook at 180c for 30 min and then lower to 160c for 15 min.
Today I'm doing a plain one with lemon zest and I'm going to fill it like a Victoria sponge.

No baking done but I've made 9 beanburgers for dinner one day next week. I am open freezing them on baking sheets and will bag them up later once solid.

I'll be attempting some gf cupcakes for the first time. Had to go to a friend to borrow a mixer as can't find the attachments for mine. Should be interesting, as I'm not very good at baking anything. If these come out right and tastes nice, it might give me more confidence. I've bought a rolling pin in anticipation0

Just made, boiled fruit cake, banana muffins, and a moist lemon sultana cake. Now for beef chili and rice, one for tea and 2 to freeze.

They didn't come out right as I filled the casings too much, but tastes deliciousChocolate flavour, so happy days
