Date and banana muffins for DH, caramel sauce (not technically a 'bake' I know) and cheese & bacon bread for tomorrow morning - can't wait for that to finish!

Today I made a fruit cake with 100gms each of butter, sugar & flour added in two medium sized eggs and then added a jar of sweet mincemeat and a teaspoon of mixed spice. Poured the mixture into a 2lbs loaf tin and Cooked it in an electric fan oven at 180 degrees for an hour.

I made sourdough pizza bases the other day then used the for vegetable pizza but I had a bit of prepared dough left over so made a small loaf with it. It turned out better than any loaf I have made before (better crust and better crumb),so I now have the challemge of recreating it.

I used this recipe http://allrecipes.co.uk/recipe/23934/basic-white-bread-for-loaves-and-rolls.aspx and also put a roasting tin with a pint of cold water to make a crusty top. hth

Does anyone know if you change auger for sweetner is it the same weight s eg 8oz sugar then I use 8oz of sweetner seems loads as very light

I haven't a clue with low fat food lol

Food this on a branded sweetener page (its in a yellow box and begins with S) and it says this

so you only need to use a tenth of the sugar quantity when following your favourite recipes

so might be worth trying 1oz instead of 8oz with a basic recipe and then altering dependent on your tastes

After deciding to become more OS in our ways, so today I have baked my 1st loaf.

Tbh I think that it turned out quite well, considering this was all done by hand, the kids think so too as it's gone already. :rotfl:

This is all thanks to the wife and kids, as they bought me Paul Holywoods book "Bread", for Christmas.

    A quick update:

As I have now made a few of loaves and even got my DD12 in making HM bread (a little different to the cupcakes she usually bakes), I now find that we have plenty of breadcrumbs as we are using a toothed knife to cut the loaf.

What I would like to know what are the best method of storing, and what can they be used for?
YNAB is my new best friend. :)

It looks good. I've never mastered bread making myself. Mine come out as hard as rock. :D
