Pancakes, served with cherry pie filling and Greek yoghurt.
Birthday cake for DS - chocolate Victoria sponge with white chocolate on the top and the last of the Continental chocolates around the outside.
All gluten free and all from stuff we had in, so I saved a trip to Tesc0.

Just a copy of the gluten free pancake recipe if anyone else is interested. Someone suggested I make a few of these and fill them with ham and cheese etc instead of taking sandwiches made of gluten free bread, which can be pretty yucky.
I just use Mum's old pancake recipe made with Dove's Farm gluten free plain flour.
4 oz flour
2 eggs
1/2 pint milk
Whisk everything together while the pan is heating up. You may not need all of the milk at first as the flour tends to sink. I use an electric hand mixer and then give a stir half way through, adding a drop of milk if the mix seems a little thick.
Get your pan smoking hot and use at least a teaspoon of oil for the first pancake. You can turn the heat down and use less oil subsequently.

I got some of the light sugar when it was in £shoppie but haven't used it yet. I thought that you use less of it but not sure - sorry.
