Lemon iced buns and twinks for me. I gave me son a twink cookie today and he couldn't believe I'd knocked them up in the short time I'd been out in the kitchen!

We basically have no money till payday and even then its very limited what we can spend. I baked some bread and some anzac biscuits to honour my great uncle who died yesterday. He was a POW and managed to survive the atrocious conditions in the Japanese camp and live to the ripe old age of 91. Heres to you Uncle Ron, you will be missed

Made some Twinks with ginger. Not made them for ages so made a nice change. Froze half as they would all be eaten too quickly otherwise.

I have only just sat down, been baking since just after eight this morning.

    I have made:

    flapjacks - didn't have enough hazlenuts so I threw in some pecans and some sunflower seeds, also used dark brown sugar that had gone hard in the cupboard, the boys are loving them and I'd like to think they are a little healthy sweet treat;

white chocolate sponges x2 - will finish it off tonight, with white chocolate buttercream and seedless raspberry jam

pancakes for breakfast with bacon and maple syrup nom nom

peanut butter and choc chip cookies

and finally a loaf of white bread is just in the oven.

So now I am taking a well earned rest! x
I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off :o

Loved reading this. Can anyone post the Weetabix cake recipe please?

    4 Weetabix
    8oz SR flour
    8oz sugar
    8oz mixed dried fruit
    8 fl oz milk

Crush the Weetabix. Add dry ingredients. Mix in milk in 3 or 4 steps. Put mixture into a greased loaf tin and bake at 170 degrees Centigrade or 350 Fahrenheit. I can't remember how long for, I just kept poking the middle with a metal skewer until it came out clean. Maybe for an hour, something like that.

Have you given the Weetabix Brownie recipe a go? Now, they are lovely!

    4 Weetabix
    4oz sugar
    4oz SR flour
    2 tbsp cocoa powder
    100gr chopped chocolate
    1 egg
    4oz melted marge

Crush Weetabix and mix in dry ingredients. Add melted marge and beaten egg. Put into baking tray and bake at 180 degrees Centigrade for 15 minutes. Remove from oven and rest for 5 minutes. Turn out and cut into squares. These are particularly good with some chopped nuts thrown in as well.

Mmm, I love ginger biscuits. Do you use ground or fresh? How much do you use?
