Double chocolate chip cookies today for my brother and the lads he works with. I know someone asked me for the recipe before - I haven't had time to type it yet but I haven't forgotten. Oh my goodness folks, there's some seriously impressive baking happening today! This is the first time I have ventured into this thread and now I'm hungry. Sigh.
Last night I made my first ever attempt at gluten-free shortcrust pastry. It was a bloomin' nightmare. I had to give up wheat about a year ago, due to an intolerance, and have adapted cakes etc pretty well, but hadn't yet braved pastry. I had a load of lemons to use up this week though, so I decided to give it a shot and make a lemon tart.
It was terrible. The dough just fell to pieces and I had to patch it into the tin. It then shrank and cracked whilst cooking, but I couldn't bear to start again so I figured I'd just hope for the best and chuck the filling in anyway. The filling promptly dripped all over the oven until it cooked enough to stay inside the tin.
By the time I took the whole sorry mess out, the 'base' of the pastry had somehow floated up through the middle of the tart and it looked like some sort of gelatinous alien pie. Disaster.
Fortunately, it tasted pretty good, if you ignore the soggy pastry texture, and Mr166 wolfed it down when he got in from work at 3am. He texted me again today to say how delicious it was, so at least it wasn't a total loss!
Must find a better pastry recipe and try again.....0 -
Last night I made lovely carrot soup, and bread and butter pudding.
All out of stuff that was nearly ready for the bin
For coffee cake - I also drizzle it. over the top. Let it cool a bit, stick all over with skewer, spoon strong coffee over the top - giving it time to soak in. Sometimes add a spoon of something stronger to the drizzleOr use that Camp coffee replacement stuff. Keeps it moist and brings out the coffee flavour.

This morning before work I baked a caramel coffee and walnut cake. I have yet to try it but it looks good!0

Batch of banana and choc chip muffins cooling and banana flapjacks in oven. Glut of squishy narnas here.
Just got blackberries out freezer for crumble too x0
