  • Just the usual loaf of bread then had a go at a fruit loaf for toasting in the morning but because I used my bread maker it seems to have sunk again! Usually I just use the dough function but tonight I just thought it'd be easier to let the machine do all the work. I think it's faulty to be honest but as it still does the dough function properly then next time I'll just do that. The top bit that's sunk will be made into bread and butter pudding for pud tomorrow night and the bottom bit, which is fine, I'll have for toast in the morning with some lurpak on mmmm x

    Have baked a batch of breakfast muffins this morning. Just had some of them with some baked beans. Very nice they were too.

    Will probably eat a couple more as a snack later today, they are very light. Will put the rest into a box for tomorrow as my DD1 is coming down and wants to try them.

  • Yet another loaf of bread. So much nicer and cheaper than plastic bread. Also my friend's little boy asked me to make his birthday cake but with white chocolate fingers instead of the ordinary ones. I'm a bit of a one trick pony with chocolate cake but here's the picture anyway x

    I use some cooked dice potato roughly mashed, cooked mushrooms (need to get rid of the water which comes out of them), cooked onions, chopped bacon, then stir into well drained cottage cheese. Mix together with some beaten eggs. The mixture is quite wet.

    Spoon into cake cases and cook at 200* for about 25-30 minutes.

    I use these for breakfast with baked beans as a "free" meal on slimming world. They also make a nice snack.

    Chestnut and orange roulade, As yet unrolled. Its my least faourite thing to do, roll a roulade. I find it ridiculously stressful.
