    I baked 2 walnut, banana, date and honey cakes to go in the freezer for treats during weekdays, had a load of black bananas to use up
  • 16 rolls, mixed in the BM and now proving in the oven and a Paul Holyw00d bloomer by hand and in the microwave for it's first prove, might throw together some choc rice krispie cakes but that's not really baking!!

    I made a Victoria sponge yesterday but it stuck to the pan (never has done before?!) so instead of trashing it I used a pastry cutter and made mini sponge cakes with it instead. I'll use the off cuts to make a trifle with tomorrow (very MSE once upon a time I'd have trashed it *hangs head in shame* )
    I also made a loaf of bread. I started the grocery challenge in August and since doing so I can probably count on one hand how many shop bought loaves we've used. I bake pretty much every day using my bread maker's dough cycle (don't like bread cooked in it)
    I had a Kenwood food processor but it went to mixer heaven yesterday so I treated myself to a Kenwood Prospero. I figured I use it more than my car so that's how I justified the expense lol. I decided to give the dough hook a go so used it to make bread today but probably won't in future as the breadmaker means I can just chuck it in and 90 minutes later I'm ready to bake. Looooove my new toy so plan on doing even more baking. I almost feel like Nigella using it ;) Sadly I DON 'T look like her! X

    As above a 'so-so' coffee cake and a great wholemeal load

    You could advise me re the coffee cake. I used Gordon Ramsay's recipe and it stated to use: 4tbsp cooled espresso or strong coffee. I made mine using a one cup espresso coffee maker, the kind that you place on direct heat and it forces the water up through tightly packed coffee. When the cake was made it turned out perfectly - except I couldn't taste any coffee.

    Can anyone advise me how best to make a strong coffee for use in baking.

    Not really in the same realm as all yours , but I do have bread pudding cooking in the oven , with thinly sliced figs and pears on top , I have a pork hock slowly roasting with lots of diced root veg , pear and a chopped fig with cider as the stock , so figured to do bread pudding at the same time . Chicken stock is also bubbling away with the peelings and ends of the veggies :)
