    We have 12 small cakes today - just teacakes, with a little buttercream on for the children to eat today / packed lunches etc.

    Tea Loaf
    ________________________________________
    I don't bake very often, so tend to have odds and ends of ingredients loitering in the cupboard. This loaf is good for using them up. Every bake is different depending on what I've got in, an endless number or combinations!



    3/4pint of tea
    10oz any kind of sugar or a mixture
    1lb SR or plain flour, if plain add 2 tbsps baking powder
    2oz butter, any kind of spread, even a mild flavoured oil
    10oz fruit, any kind of dried, or replace part of this with grated apple/carrot
    2 tbsps syrup, treacle, marmalade, maybe jam
    2 tbsps mixed spice, or your own mix of ground ginger, cinnamon, nutmug
    1 egg if you have it, milk if you don't


    put the tea, sugar, fruit, syrup/marmalade, butter in a large pan, bring to boil for a few minutes.
    Set aside to cool. meanwhile put the oven on low to warm up, at Gas 3, 170degrees.
    once the mixture is cool, add all the dry ingredients and mix well. Add the egg if you have one, or enough milk to make the mix fall off the spoon in soft blobs.
    Pour into two large loaf tins, or cake tins, or even into muffin tins - whatever. Don't fill more than 2/3rds full though. bake for an hour, or 20 minutes if little buns. check if it's cooked by putting a skewer or sharp knife into the middle. If it comes out clean, it's done.


    Serve sliced with butter if you like. The buns are nice with a little butter icing. Will keep for about a week, or freezes quite well.

  • Yesterday I was busy trying to use up all of our home grown apples (and some of the frozen fruit I got on offer a while ago) so I've an apple and blueberry oat crumble and an apple and raspberry loaf cake. can't wait til 3pm tea to try out the cake :)

    I've now room in my freezer for mince pies which are on my to do list this week, still can't get over mincemeat for 20p in tesco!
