I've always liked the Russian-style dark rye bread with caraway seeds and I've now worked out a "cheat" to make it. I use the Lidl country-style wheat and rye mix, but this never really rose enough for me in the past, so it got a bit of encouragement with a teaspoonful of dried yeast mixed with warm water and a teaspoonful of black strap molasses and left to go bubbly - the molasses gives the dark colour as well as adding to the flavour. Plus a teaspoonful of caraway seeds in the mix - or more, if you like them as much as I do. Then knead, leave to rise, knock it down and put in a loaf tin and leave to rise again, before it goes in the oven.

I've just put in the oven a caraway seed loaf cake from Delia's cakes. Never made it before so not sure what it will be like. So fingers crossed!!0
