    Hi MARMITERULESOK here is the recipe for orange and coconut cake

    1/2 cup coconut
    1/2 cup milk
    125g butter
    1 cup of caster sugar
    grated rind of 1 orange
    2 eggs
    1 1/2 cups of SR flour
    1/2 cup milk (extra)

    ICING
    1 1/2 cups of icing sugar
    1 tsp soft butter
    1 1/2 to 2 tbsp juice from orange

    Combine coconut and milk in bowl leave to soak for 1 hour
    Cream butter, sugar and orange rind until fluffy
    Add eggs, flour, extra milk beat together, add coconut mixture
    Pour into a greased and lined 23cm x 12cm loaf tin
    Bake at 180 oc for 45 mins or until knife comes out clean
    Stand for 10 mins then turn out onto wire rack to cool
    Mix all icing ingredients until smooth then spread over top of cake

    Also don't understand the extra milk quantity.

    As JOEDENISE said the first milk is mixed with the coconut then you add the rest later, i know i had to read recipe twice :)
