I'm a bit disappointed with two Delia Smith recipes.I made Ginger nut biscuits and a blueberry muffin cake with a streusel topping, both at 190c.
The first batch of biscuits were a bit burnt,so I turned the heat down to 180c.The second batch were fine.:)
The cake was a bit burnt and hard on the top, though the cake was fine.It would have fared better at 180c I think as well.I think that I'll try it again at some time at 180c.0 -

You could make jam tarts or blind bake the cases and put raspberries in the bottom and top with chocolate ganache or my personal favourite making strawberry tarts with crème patisserie. Just remembered you could use it to make mini Bakewell tarts or a giant one!'I solemnly swear that I am up to no good'0

Has anyone here got a scone recipe that they could share with me? I've got to make 40 scones for next weekend
TIA

I had some quite blackened bananas left over so thought I would make some Banana Bread. I always use Shirley Goodes recipe and have thought it delicious. today though I didn't have the Apricot jam which it includes. so I used Golden Syrup instead.
OMG - what a lovely difference! maybe I just had the baking angel helping me - but I swear the bread is lighter and the colour is more golden. its tastes different too - more like brown sugar had been used rather than white granulated.
I've written it in the recipe now so I wont forget in future!0 -

Afternoon Tea Scones
500 g (1 lb 2 oz) plain flour
1 teaspoon salt
2 teaspoons bicarbonate of soda
4 1/2 teaspoons cream of tartar
50 g (2 oz) unsalted butter, cold and cut into cubes
25 g (1 oz) lard
300 ml full cream milk
1 egg, beaten (for the egg-wash
Preheat oven to 220C / 430F
Place the flour, salt, bicarbonate of soda and cream of tartar. Add the butter and lard and rub in with fingertips until the mixture resembles breadcrumbs.
Add the milk and quickly mix everything until it just comes together in a dough. Try not to overwork the dough as this may lead to tough scones later.
Place the dough onto a floured work surface and pat it into a rectangle or circle about 3 cm high.
Cut out with a small to medium cutter place on greased baking sheet.
Brush the scones with some egg-wash before baking in a hot oven for about 10 minutes (depending on size), or until lightly golden.
