  • I've just made these-very nice!:)

I didn't dust the shapes in the cinnamon/sugar mix,but added 1/2 tsp of cinnamon to the biscuit mix.

I also just made small balls by hand and flattened them with the back of a fork.

I got 10 biscuits from those quantities. How many do you make?

That's a good idea - I might try that next time! I usually get about 12 biscuits out of these quantities.

    I'm glad you enjoyed them!

I baked Banana Cupcakes yesterday - they were delish and so cheap and easy to make:
    100g SR Flour
100g Sugar (original recipe was caster sugar, but I only had granulated, and turned out perfect)
    100g butter or marg
    2 eggs
    2 bananas
    4 tbs milk
I also added handful of walnuts and handful of sultanas as I had them in the cupboard, but not essential.
    Cream butter and sugar
    Add eggs and mix
    add bananas, mushed, and mix
    fold in flour
    fold in milk
fold in anything else you like, choc chips would also work well.

Spoon into cupcake cases (they don't rise like normal cupcakes, and I would say 2/3 rds fill the cases to get a good size overall.
Pop in pre-heated oven at 170 degrees for 20-25 minutes.
These cakes are so goey and fresh, they keep for a week easily and are also great frozen. The above quantities makes approx 12 cakes. For an extra special treat, top with melted chocolate (I have a glut of it as I bought 5 x 300g dr oetker choc cake covering @ 40p a bar)
I had some extra melted chocolate left, so I also made 6 x weetabix cakes (same as rice crispy cakes, but with crushed weetabix instead, 2 weetabix made 6 cakes)

I've got a Lemon Drizzle Cake in the oven. There was a sad looking lemon hiding in the fridge, so I thought I'd use it up.
    My boyfriend will be happy!

I'm going to be making Blackcurrant Pie. The currants are homegrown, freshly picked (3rd lot too - I have had the best ever harvest!) but I will be using a pack of pastry I picked up yellow stickered to 24p so VERY:money:
currants have been pre-cooked (to check sweetness is ok). Just waiting for pastry to thaw!
