How did it turn out ? I am trying a low fat diet so would love the recipe please

Its really easy , I used the recipe here, can't post links as am new here. www<dot>simplyrecipes<dot>com/recipes/banana_bread

then i substituted the butter with apple sauce. (you can make your own apple sauce or buy baby's food apple sauce which was what I did bcos I was out of time)

But i found that 3 bananas were too much for me and my cake turned out a bit wet. So the next time, I would probably reduce to 2 bananas instead.

    I also added :
    the zest of one lemon
    two teaspoons of lemon juice
reduced the sugar (i used brown) to half cup instead, cos i don't like my breads too sweet and the babies apple sauce was a little sweet already.
chopped walnuts cos I love nuts!

By doing that I prob cut the calorie content by 450-500 calories
    1 cup of butter = 1632kcal
    1/3 butter = 542
apple sauce = less than 100

And by cutting down on sugar, yoiu prob save a huge bit too.

    hope it helps!

Went to a cake decorating demo last night. Had a first try at piping and a sugar paste rose - it wasn't petal paste so had to be rolled thicker.

Tonight I have made leftover veg cake, it's like a carrot cake basically, really nice and moist.

Here's the recipe if anyone is interested:

  • Mr Hollywood has a lot to answer for as I made yet another bloomer today. This time I managed to make it good and crusty and it was divine. The only trouble is I have a bit of a penchant for nice bread so I'm sitting here stuffed like a good 'un ;) If bread was diet food I'd be a skinny rake by now!!! X
