    7 fruit crumbles for the freezer

    peachyprice can you share the recipe for the date and ginger malt loaf?

    140g chopped dates
    410 can evaporated milk
    100g soft brown sugar
    200g butter
    225g plain flour
    3 tbs horlicks or the like
    2 tsp ground ginger
    50g stem ginger (I used glace as I had it in the cupboard)
    2 tsp bicarb
    2 eggs

    Heat oven to 160, line a 900g loaf tin.

    Put the dates, sugar and evap milk into a saucepan, bring to the boil and cook for 5 mins until the dates are soft and the sugar has dissolved. Leave to cool (this takes ages)

    Now, the recipe says put the flour, horlicks, ground ginger, stem ginger, bicarb and butter into a food processor and blitz until it resembles bread crumbs, I don't have a FP so I did that bit in my Kenwood, (but turned my back for a few seconds and it went way beyond breadcrumbs :o) Pour in the cooled date/milk mixture and eggs and pulse briefly until mixture is combined (mine took a little longer than briefly because of the breadcrumb situation above)

    Pour into the loaf tin, (there's loads of mixture it filled mine to the top almost and rose well above the top of the tin) bake for 1hr 15 mins until a skewer comes out clean, leave to cool for 10 mins in the tin, then transfer to cooling rack.

    I didn't think mine would come out right because of breadcrumbgate, bit it did, it has a really moist texture, although not as sticky as a malt loaf. I think it would be good with nuts in too, perhaps some chopped walnuts.

    I made this milk bread yesterday too! We make one most weeks here, even my husband loves to make this one. The recipe I use is very slightly different (it's from one of Dan Lepard's books), but it's near enough as makes no difference. This bread is just gorgeous - we love it in sandwiches, toasted and just as bread and butter. It's a favourite supper snack for my boys. It's a really handsome looking bread too!

    Today's baking plans include 3 large square madeira cakes (one chocolate, one vanilla and one coffee) which are to be cut up re-assembled in concentric squares and covered with buttercream and coloured marzipan for a Minecraft cake for son's birthday tomorrow.

    Scones using the Paul Hollywood Recipe as a guide:

    500g/1lb 1oz strong white flour, plus a little extra for rolling out
    80g/3oz softened butter, plus a little extra to grease the baking tray
    80g/3oz caster sugar
    2 free-range eggs
    5 tsp baking powder
    250ml/8½fl oz milk
    1 free-range egg, beaten with a little salt (for glazing)

    Difference seems to be that he uses 2 eggs in the mix. Haven't really noticed that in other scone recipes. He also uses strong flour as opposed to plain flour.

    I used plain flour and put in 4tsp of baking powder plus 1tsp of Cream of Tatar and they turned out fine. Was afraid 5tsp of baking powder was overdoing it a bit.

    I made a huge beef casserole and my friend and I had gigantic helping at lunchtime and there is enough left over for two portions for the freezer.real comfort food and full of carrots,onions and mushrooms with chopped up shin of beef
