  • I did some baking Friday night as I wanted to make a meringue for pavlova dessert on Saturday, so to make it worth while I baked a batch of biscuits and a victoria sponge - DH and the kids are in heaven!
    If you're not hungry, food isn't the answer!

    I've been busy in the kitchen today, making twinks biscuits, hm chocolate chip cookies, and a hm apple crumble, to which I added mixed spices to the crumble topping, and it was delicious.

    On top of cooking burgers, and wedges for lunch and a huge pan of leek and potato soup for tea and lunches this week.
    2016 is the year I am going to find time for me, and cherish the time I spend with my friends and family.
    It is also time to save - Aim £4,000 - So far this year - £230/£4,000
  • Yesterday I made a chocolate sponge cake, blondies and flapjack. Need to do lots of exercise to compensate for eating these goodies now!! I love bakin though

    chocolate cake with flake and choc buttons on top and a milk loaf roll on supper time ,bath and a good book

    I have made Lorraine Pascale's Blueberry & Oat Muffins.
    The recipe made loads more than 12 suggested - and they are scrummy. Will definitely be making them again!

    They do look good!I'd love to make Eccles cakes one day.
    They are so easy as i use ready made puff pastry(which was left from when i made a pie fri) ,roll the pastry quite thin, i cut the circles out with a cereal dish as you need it quite big, then put mincemeat in the centre and bring the pastry up ,turn over and shape ,glaze with egg and sprinkle some sugar on the top hth

    Thanks,I forgot to ask you how you made them!I think that I've got a recipe somewhere.Do you always use mincemeat?Do you use two circles or one?
