I had a piece of this cake today - yummy.
4oz margarine - I used butter. 1oz desiccated coconut.
4oz self raising flour.
4oz caster sugar.
2 eggs - I used medium.
1 small orange (or use lemon)
Cook in 7 1/2 inch greased lined sandwich tin - I used a 6 inch tin and cooked for longer time.
Cream marge/butter with sugar. Beat in eggs. Then beat in grated orange/lemon rind and juice. Fold in 1/2 oz coconut and flour. Put in tin and sprinkle remaining 1/2oz coconut over cake.
Bake - centre - oven - 190 - 30 minutes or until cooked. I cooked at 180 as my oven is hot with the new fan.Decluttering Achieved - 2023 - 10,364 Decluttering - 2024 - 8,365 August - 0/45

For some time now I have weighted the eggs for this type of sponge cake simply because eggs vary in weight and then weighing your marg, flour, etc to the same weight eg if your eggs weigh 120grams increase the other ingredients to that level, if they only weigh 110 grams then decrease the the weight. I've been doing this for several years now and I do think I get a more balanced and consistent cake. I have never bothered with weighing eggs. I always used stork/baking marge but it is full of additives. just made my first ever batch of eclaires` and they look a little flat, and a little soggy in the middle , but i will fill with butter creame and cover in chocolate, and hope for the best... loltoday's mood is brought to you by coffee, lack of sleep and idiots.

well I have to say they were.... horrid..... I hate to waste food but they had to be binned.. yuck..... next week I'll try again.. I went over what i did with MIL and think i know what went wrong.. oh well.... today i made cheese rolls to have with some home made lentil soup and it was lush.. so win some lose some.

Hi everyone, first time posting here and I am not a great baker but today I baked Philadelphia Brownies and chocolate chip cookies. They were yum, dd friend was here and she is very well mannered and she was back asking for more so I take that as a compliment yeah, something has worked. Would someone please post the recipe for the lemon cake as it sounds yummy. Thanks.0
