    Enjoy! I made some the other day using a very similar recipe, and although my dds liked them, they said they prefer bought ones! I think its because bought ones are lighter and fluffier - more cakey and crumbly, these were a bit more dense and less airy.
    Anyone have any tips on how to make blueberry muffins like the ones in coffeeshops?!

    I didn't find these ones dense at all, to be honest, they were lovely and fluffy. I think the trick is not mixing the batter too much, it's supposed to look lumpy and horrible and they say the lumpier the batter, the lighter the muffin! And also disregard what temperature the recipe says, pre-heat the oven to about 225ºC, put the muffins in and straight away turn it down to whatever the recipe says. It gives them a lovely high dome-shaped top.
  • Thank you - i'll try the tip with the oven temp. I didn't mix them much -still lumpy looking batter, just a quick mix. But they didn't rise as much as I expected.

    Today I made Lemon Drizzle Cake and Chocolate Cup Cakes decorated with Maltesers to take into work. They all went down very well and my new boss is well impressed:D

    today I made a loaf, 8 rolls, half a batch of twinks and an addpted version of Dorset apple tray bake using fat free (HM) yogurt instyead of butter. I also cooked some beetroot to make a beetroot and orange chutney but ran out of ebnergy before I could finish it so will do that tomorrow.

    I made some cookies earlier using this recipe, but used a bashed up bar of chocolate rather than chocolate chips. The one I tested was yummy! I'm going to see my dad tomorrow and made these to take with me.
