    Two huge cornish pasties for tea and 12 jam tarts with the left over pastry. All gone now!!

    Oh dear that sounds bad! just add that DD ate most of the jam tarts!!

    OK, there are hundreds of threads about it, but this was the one we did today. I have no idea how or where I got the proportions, but if i am quoting someone's recipe, thank you!

    Oh, and I always mix my measurements - I'm sorry, but it's from being a child of the 70's and forced to use both metric and imperial.

    normal bread recipe

    1lb strong plain flour
    1 tsp yeast
    1 good pinch salt
    1 tsp sugar or 1 blob honey
    1 tblsp oil (any type you like)
    300 mls warm water (100ml boiling, 200ml from the tap)

    plain flour for dusting

    topping

    2oz rice flour (incredibly cheap at Chinese supermarket, also called ground rice in sainsburys)
    1 heaped tsp yeast
    1 pinch salt
    1 tsp sugar
    just under 80ml warm water
    1 tblsp sesame oil (again much cheaper at chinese supermarket)

    Put oven on gas 8 and bung baking tin filled with water on the bottom shelf. Oil and flour your baking tray/tins (it's annoying having to stop kneading and sort them out later - a 10 year old is the ideal slave for this, but don't mop the kitchen floor beforehand, because you'll end up having to do it again anyway)

    Make bread dough as usual and leave to rise. A ten minute kneading (don't knock yourself out, just keep it moving, using just plain flour - it's cheaper - for dusting stops it sticking to you or the counter.

    While it is proving, knock up the topping in the same way as a normal dough, but it will be a gloopy liquid. Cover it with cling film while you sort the other dough out (if you are letting it rise twice, but if you've used easy bake yeast just put it on the side while you go and have a nice cuppa). Again, a 10 year old is perfect for making this as they have to stir it rather than get their hands in it. A large cereal bowl is the perfect size receptacle)

    When you go back to it, it looks an unusual colour and is very frothy. It will be very thick and will collapse down as you burst the bubbles, rather like emulsion paint consistency.

    Drizzle/paint/blob it over the top of your loaf/loaves. (not poking the dough underneath hard though, because you still want light bread). 10 year olds enjoy the tip-the-bowl-and-trickle-it-on method, which avoids poking of bread dough.

    Bung it in the oven and leave it for 25 mins (for 2 small loaves divided between two 2lb bread tins) until it gives that satisfying 'thunk' when you tap the bottom of it.

    Place on a rack/line of chopsticks/grill pan rack/whatever so that the whole loaf crisps. Ban family from kitchen for 10 minutes.

    It slices like a dream, and the crunching sound is spot on.

    Wrap it in brown paper, never plastic, and

    Take absolutely fresh butter with you - margarine or slightly on the turn butter will never do!

    going to keep wed morning for my batch baking/ cooking day trying to fit loads in the oven before i switch it on
