    I've made lots of quiche today, some spinach, tomato and mozzarella, some smoked salmon and spinach. With the mini pizzas I made as well I now have a freezer full!

    Oh that sounds yummy! Do you have a recipe you could share?
    I use the fruit loaf recipe from my Morphy Richards booklet which is actually called raisin loaf.


    For a 2lbs loaf
    • water 1 1/2 cups (sometimes need more than this I watch it mix in the bread machine at the start and see if it needs more)
    • skimmed milk powder 4tbsp (I don't add this and don't have a problem)
    • sunflower oil 4 tbsp (I use 2-3)
    • sugar 2 tbsp (I use 1 - 1 1/2)
    • salt 2 tsp (I use 1)
    • cinnamon 1 tsp ( I use around 3 and even then I think it could do with some more :o this is why I call it a a cinnamon fruit loaf :rotfl:)
    • strong white bread flour 4 cups (I use basic flour and find it works perfectly well)
    • fast action yeast 1 1/2 tsp
    • raisins 3/4 cup (I use saltanas or mixed fruit and I have to admit I usually use a bit more than this)
    In my booklet it says to add the ingredients in the pan in the order I have written them but I find that that makes a brick of a loaf. Instead I add all the dry ingredients first, then the wet ingredients with the water being the last to go in as I find that I get a perfect loaf every time like that.
    I add the dried fruit when the beeps sound on my breadmaker.
    If you are doing it by hand that you would have to mix, kneed and let the dough rise once before you then kneed the dried fruit in then go on to rise again and then putting it in the oven. I hope that makes sense.

    There are no eggs or dairy in it as I am vegan. It also keeps the cost down more. It costs about 90p with the electricity of the bread maker to make this loaf - in Mr S you can pick up a cinnamon raisin loaf that is only 400g (around 1lbs) and it costs £1.20 :eek:.

    I made these: http://www.rivercottage.net/recipes/honey-peanut-butter-booster-bars/ Used golden syrup instead of honey and didn't have any orange or lemon zest. Really nice and sweet but next time I might use honey and less sugar.

    Do you think using pure (a vegan spread) would work in place of the butter? If so, with the help of my partner, I could easily make a vegan version of this by using agave syrup in place of honey :). Will be great for a snack when my partner is at work. Also do you think it would freeze well? If it makes 16 portions and only lasts 5-7 days in a tin I would be wasting half the batch (although I suppose I could just half the recipe instead). Would be great if it freezes well!

  • Well I made the spiced fruit loaf (I used tigerfeet2006's recipe as my hens have decided it is definitely spring so I have plenty of eggs) and the verdict was: brilliant! Plus the house was smelling very homely whilst it was cooking with all that cinnamon and spice.

    Next time I might try scaling the recipe down as it is a bit large for just two of us!

    Pure would work ok. (I think vitalite tastes better). I'm not sure about freezing them, you could try with a couple and see what happens.

    Today I baked some brown rolls and a wholemeal loaf. Used molasses instead of honey in the loaf so it should taste interesting/different.
