This is based on one of Gordon Ramsay recipes and it went down a treat when we were finished in the garden this afternoon.
Ingredients -
4 Granny Smith apples
Juice of 1 large lemon
200g caster sugar
4 tbsp liquid glucose - couldn't find this in my local supermarket but Boots came to my rescue!
Saturday. I started off by coring the apples and then, without peeling, cut them in quarters.
To keep them from going brown I tossed then in the lemon juice and them immediately popped them into a plastic bag and bunged them into the freezer. They were supposed to stay there for 2 hours but I done it on Saturday night and didn't start making my mixture until Sunday morning.
Sunday. Removed apples from the freezer. Then placed 400ml of tepid water into a saucepan and added the caster sugar, turned up the heat and brought to the boil and then simmered for a further five minutes. After that I removed it from the heat and added the liquid glucose. I then set the mixture aside to cool
When the apples had thawed a little I cut them up into manageable chunks and whizzed them in my food processor and made a puree by adding a little of the syrup. When I had a nice looking puree I then added the rest of the syrup and gave a whiz.
I then pressed the syrup through a fine sieve and added the mixture to my ice cream mixer, sat back and waited. When the mixture was almost solid I removed from the ice cream maker and placed in an empty Greek yoghurt tub, popped it back in the freezer and let it freeze for thirty minutes. The results, I have to say were pleasing.
Next time I'll have to remember to remove my apples at the correct time or at the very least cut them into more manageable chunks0 -
