    Made a Toffee Cake today and its soooo yummy!

    Have to admit tho ... unlike my usual baking from scratch this one was a Wrights cake mix ... cooked in oven not BM and its delish!

    We needed something sweet for lunches so whisked it up in seconds and 50mins later it was baked ... ideal for when late at work :D

    Tried it at the Good Food Show so knew it would be good :)

    Am having a go at baking english muffins from Delia's recipe... if all goes well I look forward to poached egg and a muffin in the morning! Fingers crossed...

    Basically a fruit cake, but sooo easy.

    1 tsp Bicarbonate of soda
    8 oz self raising flour
    4 oz sugar
    8 oz sultanas or mixed fruit
    1 tsp mixed spice
    4 oz margarine
    1 cup of strong black tea
    1 egg

    Melt the margarine, tea and fruit in a large saucepan.
    Simmer for 1 minute.
    When the mixture has cooled, add all other
    ingredients.
    Put in a loaf or round tin and cook for 1 hour at Gas 4.



    I have just made this well it came out of the oven about 30 mins ago, and couldnt resist, had a little slice;) and it is delicious .Thank you for sharing .:)

    I have been very naughty today and bought a panini press :D So tonight I'll start off some ciabatta and finish it tomorrow. It's a bit of a faff but home made is much nicer.

    Although I did buy some from Sainsburys when I got the panini press and had one for lunch and it was lovely.

    Am toying with the idea of making some muffins too but can't decide what I fancy.

  • Last night I baked white choc chip and cranberry muffins and coffee and milk choc chip muffins. My work colleagues will be delighted today.

  • Just "invented" a lemon curd and almond loaf cake which has come out beautifully. I had run out of butter and yoghurt needed for the recipe so though "I know, if I use lemon curd that's got butter and egg in it, its a bit like cake mix". Anyway just taken it out of the oven and it looks yum! Roll on teatime!

    I fancied something sweet and made a sort of Chelsea bun with leftover pizza dough. Delish with a cup of tea.:)
