Basically a fruit cake, but sooo easy.

    1 tsp Bicarbonate of soda
    8 oz self raising flour
    4 oz sugar
8 oz sultanas or mixed fruit
    1 tsp mixed spice
    4 oz margarine
1 cup of strong black tea
    1 egg

Melt the margarine, tea and fruit in a large saucepan.
    Simmer for 1 minute.
When the mixture has cooled, add all other
    ingredients.
Put in a loaf or round tin and cook for 1 hour at Gas 4.

I have made some cupcakes / fairy cakes today, vanilla flavoured! They were a trial for some I will be baking tomorrow evening for a charity tea and cake break at work on Friday.

Everything went well... until the piping bag decided to pop and buttercream went on the floor! I think I'll stick to spreading it on with a knife! :D
