    Another batch of banana muffins.

I put quite a lot in each large muffin case so only made 9. We ate 2 and I am going to freeze the other 7.

I found that if you microwave frozen muffins on high for about 1 minute they are ready to eat.

Why did I find that tip, it means I can have them whenever I want now, that is deadly!

    :D

Love your recipe which you posted- I found if you add the chocolate AND the nuts then it makes 12 rather than 9....+ demarara sugar on the top. Very popular in our house.

I made a huge chicken & sweetcorn pie with hm pastry and hm white sauce! The chicken came off the 2 carcasses I boiled to make 4 pt of stock, all boxed up and in the freezer!

I also made a banana cake and tomorrow I'm making a chocolate beetroot cake. These 2 cakes are for work on Monday for my birthday, as we have a [STRIKE]silly[/STRIKE] tradition of bringing in cakes on our own birthday ~ surely it should be the other way around?!

I could get 12 out of the mixture but I like to fill the cases quite high as I like big muffins.

I have decided to teach the grandkids how to cook, and am trying out some recipes for them. (they are both six years old) they have succesfully made coconut kisses and garibaldi biscuits but today I decided to make some fudge for them as a treat and to try out a recipe for peppermint creams.
I like ordinary fudge but the recipe i found in a little booklet I picked up on Holiday was for Honey Fudge. and it is seriously gorgeous!!!!! I used Orange Blossom honey and it was nice and easy, but not suitable for the kids to make. I had some condensed milk left over so decided as I had Icing sugar and peppermint, to make peppermint creams.
the peppermint creams however, are almost too easy! so I decided to coat them in chocolate - mmmmmmmmmmmmmmm very much like those bars of chocolate with the white peppermint centre (you all know the ones I mean).

Oh, and I finally found somewhere which sells rosewater for cooking with!!! after a week of searching the local supermarkets with no success - I finally found some in (of all places) Health with Herbs! unfortunately I forgot to get citric acid so will make my Turkish Delight when I can get some.
Hi..can you teach me to cook too please? I'm pretty useless! :rotfl:
Another fun (and cheap) one which the grandkids might like is jamdrops, I've just made these with jam in some and nutella in some with my kids. (they like squashing their finger in the middle to put the jam in) :D

    Have fun x

    Hi
was just wondering if the white sauce in the pie is a shop packet one or one you make yourself? My gran used to make lovely chicken pies with white sauce but i'm afraid I just chuck in a can of condensed chicken soup (not the same) x

I make mine from scratch with marg/butter, flour and milk, then season it. A can of condensed soup sounds fab to me, I hardly have soup in the house anymore as it's so expensive.

my banana muffins smelt a bit 'odd' after a couple of days...i just kept them in a tin in the kitchen, should they have been in the fridge?
I really wasn't sure if they were ok or not so the dogs had em :o
    any tips?

I froze mine and I just take one or two out as needed, they only take about 45 secs on high to defrost.

    ;)
  • Hi :) I haven't posted on this thread before, I hope it's ok to just jump in? :)

Yesterday I baked oatcakes (savoury, not sweet biscuits), from a recipe in Good Housekeeping mag...I think I'm the only one who likes them though :S Never mind, more for me!!!! Not baking, but I did also make a "summer beetroot" soup from the Victory cookbook. I hven't tasted it properly (as in eaten it for a meal) but it smells.....interesting.... ;)

The day before I made an egg free ginger cake for my mum in law who is allergic to eggs :)

Hello folks dont post here oftern but have had a mega baking session today with a banana loaf, carrot cake loaf, 2 beetroot and cranberrie loafs, dozen fairy cakes, dozen choc fairy cakes, tray of millionaire shortbread and tray of coconut and mint slice. Much of this will go into the freezer and the tray bakes I will take some to work for our tea breaks. Hubby has two to three cakes/slice of loaf or tray bake pieces in his piece box each day so baking this will save a fair bit money this week. I also made a white load in the bread maker, to go along with the pot of tattie soup that was from yesterday.
    Every days a School day!
