im just about to make twinks hobknob recipe but realise i havnt got any bicarb of soda.. is this an essential part of the recipe or can i get away with not adding it

Today I made Welsh Cakes for hubby cos they are his fav...even though the recipe said makes 4-6 I got 9 out and still thought they were rather big!
I dont have a good heavy bottomed pan so I had the bright idea of chucking them on the panini maker to cook (leaving it open) and it worked a treat!
I think I'm gonna have to take up jogging soon though will all these great ideas! lol
just incase anyone wants the recipe for welshcakes (so you can be welsh like me! lol)
Ingredients- 225g/8oz self-raising flour, sieved
- 110g/4oz (preferably Welsh) salted butter
- 1 egg
- handful of sultanas
- milk, if needed
- 85g/3oz caster sugar
- extra butter, for greasing
Preparation method- Rub the fat into the sieved flour to make breadcrumbs. Add the sugar, dried fruit and then the egg. Mix to combine, then form a ball of dough, using a splash of milk if needed.
- Roll out the pastry until it is a 5mm/¼in thick and cut into rounds with a 7.5-10cm/3-4in fluted cutter.
- You now need a bakestone or a heavy iron griddle. Rub it with butter and wipe the excess away. Put it on to a direct heat and wait until it heats up, place the Welsh cakes on the griddle, turning once. They need about 2-3 minutes each side. Each side needs to be caramel brown before turning although some people I know like them almost burnt.
- Remove from the pan and dust with caster sugar while still warm. Some people leave out the dried fruit, and split them when cool and sandwich them together with jam.

Yesterday I baked
47 banana cakes
Normally do banana muffins but as the school only sell them for 20p each I made them in fairy cake cases.

Just made a malteesers tray bake and chucked it into the fridge to set but YIKES :eek: you don't half need a lot of malteesers!
This no matter how good is going to have to be a 'now and then' treat as it works out very expensive (for the maltessers alone) when I know it will be demolished by 3 kids..hubby and me in no time!

The other day I tried a new receipe of Anzac biscuits which are lovely - very similar to twinklie hobnob receipe but it also has coconut in it. Will need to make another batch as lots of oats in the house now and we all liked them.MFIT T2 Challenge - No 46

Another batch of banana muffins.
I put quite a lot in each large muffin case so only made 9. We ate 2 and I am going to freeze the other 7.
I found that if you microwave frozen muffins on high for about 1 minute they are ready to eat.
Why did I find that tip, it means I can have them whenever I want now, that is deadly!0
