My Christmas cake is in the oven but I'm really annoyed because I forgot to put the almonds in it :mad: serves me right for trying to hold a conversation while making it
OH went to buy the ingredients yesterday and came back with flaked almonds instead of whole ones so I guess it was just destined not to have nuts in it!
Anyway, I'm hoping to make some applesauce muffins later today so fingers crossed I get those right0 -

Not quite brave enough to try a Christmas cake yet... maybe next year

I'm just about to whip up a Victoria-style sponge. (The next recipe in my WI Book of Cakes) challenge.
I will be filling it with home made jam. Hubby has made over twenty jars of jam using free yellow plums, red plums and tons and tons of blackberries from the fields by our house. It has been a bumper year for blackberries here. It's a shame that not many people are collecting them.0 -
This is the recipe I use with cooking apples simmered down with no sugar

Its an American website so all-purpose flour is the same as our plain flour, baking soda is bicarb and a stick of butter weighs 4oz
There are a few other sites that use the same recipe but reduce the sugar or butter so try the original first then if you find them too sweet for your taste or aren't keen on using so much fat try any of the others below

We're having friends over for dinner tomorrow and I decided to do chocolate profiteroles for pudding, so I'm making the little choux buns today. I'm watching them through the oven door and they look a bit massive, but I'm sure that nobody will complain :rotfl:0

Ooh,sounds nice!I've never made choux pastry,but would love to try-it's on my 'list'!
Today I was going to make a courgette cake,with a courgette that had been lurking in the fridge for a few weeks,but,when I tasted it,it was very bitter.So I didn't use it,and since the recipe already had a grated apple in it.I just replaced the courgette with more apple.
I've just tasted it,it's very moist and a bit crumbly.It tastes good,but I can't really taste much apple.
I've also made a plain Victoria sponge sandwich,my second one ever!
I have a question for all you bakers out there:are you like me,and re-use greaseproof paper?After washing the sandwich tins,I also washed the greaseproof paper circles,and intend to use them again.Anyone else do this,or do you think that it's taking things too far?!;)

running out of butter here but had just enough stuff to make cherry & coconut flapjacks....normally i frazzle flapjacks and cant cut them as they crumble so wish me luck!Why does my dog chase cars? Even if he caught one he hasn't passed his test!0
