    Had a very productive day!:D

    Made
    banana and chocolate cake
    Chicken curry for tomorrow in the slow cooker {okay not baking}
    Got given 500g of pork mince so made a spicy meat ball and pasta bake
    Two loaves {in bread maker:o}
    Cheese, spring onion and chive pasties

    and i laid the lino in the bathroom:T- 1st time and it's perfect. I know it's not baking or remotely to do with cooking, but i'm so proud.
  • Today I made:

    Norwegian cinnamon buns
    Orange breakfast muffins
    Granola

    Should have made bread but just felt too poorly.

    Baking anything is something you get better at the more you do it. And, unlike shop-bought clones, even then you get variations. Sometimes its a bit over or under done, or too sweet, etc. But that's home-baking. I remember one of my mother's home made chocolate sponges came out kind of hard and crispy. My brother and I loved it and begged her to bake another mistake-cake.

    The best tip I can give about muffins is to only stir the mixture enough to very roughly combine the ingredients.
    Also, home-baked, real muffins don't rise like huge pointy mountains, like the mass produced ones.
    Thanks for that budgeteer :) Yeah - I really must stop being such a wuss, and " lighten up" a bit, mustn't I? lol

    I can bake, I bake other things. Today I did a lovely Jamaican Ginger Cake - only I do it in a brownie type tin and cut it into 16 squares - I'm just very hard on myself when things don't turn out according to plan, and I've no idea why... but as you quite rightly say, some custard or a dollop of cream would disguise all but total disasters :D

    Wow! Well done you on laying the floor! :T The pasties sound lush too - I've never made a pasty. Ex hubby wouldn't eat anything like that, and I've never thought to try with my new partner, but I'd quite like the recipe for those if you wouldn't mind? :)

    I did make a second batch to use up some strawberries and I used a tub of strawberry yoghurt instead of milk, they were the best of the 3 batches that I have made and were really moist if not nicer the next day.;)

    Love the sound of the Peanut Butter ones sb44 - not got any yoghurt at the mo though, but I will seriously try and summon up the courage to give them a bash within the week! :)

    omg what a good idea...i need custard for the not so light cherry almond cake i made yesterday! hahaha :rotfl:

    ok the Nigella cherry choc cakes look nice (havent tried one yet though) but the kids cupcakes were so hard to ice...i really need more practice (and patience :mad:)

    Sb44 =- just made the muffins which came out the best of all the muffins I have made so thank you for posting the recipe! I altered it slightly to include walnuts AND chocolate and put demarara sugar on the top! They are yummy.

    Btw can some kind person tell me how to post links...plllleeease!

    Both cupcakes look lovely :) My sister in law made the chocolate cherry cupcakes the other day and they were gorgeous. Very rich though, she made them quite small and even with my desperate sweet tooth one was definitely enough.

    lol Hippeechiq! I am deffo NOT organised...its been chaos all day and i ended up making these late...the place is covered in food colouring and it's nearly midnight and I still have one of the kids PE kits in the tumble dryer as we speak!!!!
    To be honest it is only because of you lot on this thread that I am making an effort to home-bake more, it's nice to feel insipred by all your lovely ideas :)

    Angeltreats..ive still not tried one yet, the icing on the kids dollymixtures cakes are still struggling to set and Ive put the cherry ones in the fridge because im not sure if they should be left out as the topping was double cream & chocolate mixed...

    Right...i really need to sleep before i fall asleep mid senten................zzzzzzzzzzzzzzzzzzzzzzzzzzz

    Today I baked a caramelised apple cake with streusel topping from a great recipe on the BBC Good Food website - used some of the windfall apples from the garden and doubled the amount in the recipe - second time I've made this and another great result.
